Homemade Za’atar Hummus

Description

Made with garbanzo beans, tahini, garlic, olive oil, and a blend of cumin and za’atar seasoning, blended into a smooth spread. Serve with freshly chopped Castelvetrano olives, a sprinkle of paprika, an extra dusting of za’atar, and a drizzle of olive oil.


Ingredients

Units Scale
  • 1 can chickpeas, drained
  • 1/2 cup tahini
  • 4 tablespoons lemon juice
  • 3 tbsp olive oil
  • 2 cloves of garlic
  • 1 tsp cumin
  • 1 tsp Za’atar seasoning
  • 23 tablespoons of cold water or aquafaba (liquid from chickpea can)

Toppings (optional):

  • Paprika
  • Parsley
  • Chopped olives
  • Za’atar seasoning


Instructions

  1. Drain 1 can of chickpeas and reserve some of the liquid.
  2. In a food processor or high-powered blender, add aquafaba (you can also use water instead of aquafaba), olive oil, minced garlic, seasonings, lemon juice, and blend.
  3. Add in chickpeas and tahini and blend until smooth.
  4. Spread onto plate and drizzle with olive oil, top with olives, sprinkle of paprika, parsley and some extra za’atar.
