Description
Made with garbanzo beans, tahini, garlic, olive oil, and a blend of cumin and za’atar seasoning, blended into a smooth spread. Serve with freshly chopped Castelvetrano olives, a sprinkle of paprika, an extra dusting of za’atar, and a drizzle of olive oil.

- 1 can chickpeas, drained
- 1/2 cup tahini
- 4 tablespoons lemon juice
- 3 tbsp olive oil
- 2 cloves of garlic
- 1 tsp cumin
- 1 tsp Za’atar seasoning
- 2–3 tablespoons of cold water or aquafaba (liquid from chickpea can)
Toppings (optional):
- Paprika
- Parsley
- Chopped olives
- Za’atar seasoning
Instructions
- Drain 1 can of chickpeas and reserve some of the liquid.
- In a food processor or high-powered blender, add aquafaba (you can also use water instead of aquafaba), olive oil, minced garlic, seasonings, lemon juice, and blend.
- Add in chickpeas and tahini and blend until smooth.
- Spread onto plate and drizzle with olive oil, top with olives, sprinkle of paprika, parsley and some extra za’atar.
