Description
These frozen key lime pie pops are zesty, creamy and swirled with graham cracker crust.

- 1 can full fat coconut milk
- 1 cup greek yogurt ((or two 5 oz containers))
- 3 tbsp key lime juice
- 2 tbsp key lime zest
- 2 tsp vanilla
- 1/4 cup honey
- 1 cup crushed graham crackers
- 1/4 cup coconut sugar
Instructions
- In a large bowl ad your coconut milk, yogurt, lime juice, zest, vanilla and honey. Whisk together until combined.
- Fill a gallon sized plastic bag with one sleeve of graham crackers. Make sure the bag is sealed tight. Using a rolling pin, crush the graham crackers until they are almost a sand-like consistency. Mix in coconut sugar with graham cracker crumbs.
- Using cleaned out popsicle molds, start with pouring key lime popsicle batter in each mold, fill about 1/3 way up the mold. Sprinkle a layer of graham cracker for the “graham cracker swirl” and top with another layer of key lime batter. Add 3-4 layers of each.
- Once all the molds are full, sprinkle the top of the mold with graham cracker dust. Insert your popsicle sticks and freeze for 8-12 hours.
