Is it even summer if you don’t have endless amounts of frozen treats in your freezer?! You are going to want to stash some of these for a refreshing treat on the hot days. These creamy key lime popsicles blend sweet and tart, swirled with graham cracker crust. These popsicles are a yummy, light treat for any summer afternoon!

We combined everything we love about two of our favorite summer deserts for this recipe. We wanted to mix the fresh zesty flavor and graham cracker crust of the key lime pie with a cream-based popsicle. The blend of creamy coconut milk and Greek yogurt with a tangy kick from key lime juice and zest and a sweet swirl of graham cracker crust make these irresistible. You may go back for seconds!

Summer has settled and it seems like it is here to stay for a while. And to be honest, we love everything that comes with summer. The longer days in the sun, the days relaxing by the pool or spontaneous road trips. We are here for all that the longer summer has to bring, that even means the heat! And with the heat, comes the cravings for cold treats. In our opinion, there is nothing that beats the heat quite like an ice-cold popsicle.

These popsicles couldn’t be easier to make and they are easy to grab for a yummy summer snack! It just takes whisking ingredients together in a bowl, pouring and freezing until solid to eat. What made them so easy was using these silicone molds from Amazon. They were flexible, making them easy to remove and hold enough for 12 popsicles!

What’s in the Recipe:

Coconut Milk: The creaminess comes from the rich coconut milk. We chose this over alternatives because it has a thicker texture, similar to heavy cream and provides that same consistency with a nice hint of coconut flavor.

Greek Yogurt: We love adding Greek yogurt to our popsicles because it is lower in sugar, yet still adds to that creamy texture.

Key Limes: You can’t have keylime pie without the key limes!! We may have gone a little overboard with the zest, but we promise you there will be no denying th ekeylime flavor in these popsicles.

Graham Crackers: We wanted these popsicles to resemble one of our favorite summer desserts and to do so, we layered graham crackers throughout the popsicle, so you get the crust in almost every bite. Delishhh!!

Creamy Key Lime Popsicles

These frozen key lime pie pops are zesty, creamy and swirled with graham cracker crust.

Ingredients

  • 1 can full fat coconut milk
  • 1 cup greek yogurt ((or two 5 oz containers))
  • 3 tbsp key lime juice
  • 2 tbsp key lime zest
  • 2 tsp vanilla
  • 1/4 cup honey
  • 1 cup crushed graham crackers
  • 1/4 cup coconut sugar

Instructions

  1. In a large bowl ad your coconut milk, yogurt, lime juice, zest, vanilla and honey. Whisk together until combined.
  2. Fill a gallon sized plastic bag with one sleeve of graham crackers. Make sure the bag is sealed tight. Using a rolling pin, crush the graham crackers until they are almost a sand-like consistency. Mix in coconut sugar with graham cracker crumbs.
  3. Using cleaned out popsicle molds, start with pouring key lime popsicle batter in each mold, fill about 1/3 way up the mold. Sprinkle a layer of graham cracker for the “graham cracker swirl” and top with another layer of key lime batter. Add 3-4 layers of each.
  4. Once all the molds are full, sprinkle the top of the mold with graham cracker dust. Insert your popsicle sticks and freeze for 8-12 hours.
