Description

This healthy yellow squash casserole is the perfect side dish to serve with grilled chicken, pork chops or pistachio crusted salmon.


Ingredients

  • 4 cups yellow squash (sliced)
  • 1 yellow onion (chopped)
  • 4 garlic cloved (minced)
  • 1/2 cup chicken broth
  • 1 cup greek yogurt
  • 2 tbsp avocado mayonaise
  • 1 cup Parmesan cheese
  • 1 cup panko bread crumbs
  • 1 egg (beaten)
  • 1/2 tsp Italian seasoning
  • 2 tsp salt
  • 1 tsp pepper


Instructions

  1. Preheat oven to 350. Slice squash, dice onions and mince garlic cloves.
  2. In a Dutch oven, add a tablespoon of olive oil and sauté the squash for 5-7 minutes. Put the squash in a colander to allow the excess liquid from the squash to drain.
  3. In the same Dutch oven, add chicken broth and onion. Sauté until onions are translucent (5 mins) and add garlic, salt and pepper. Sauté for 1 more minute.
  4. In a small mixing bowl, combine the greek yogurt, avocado mayo, 1/2 cup of Parmesan cheese, 1/2 cup of panko bread crumbs, italian seasoning, salt and pepper and the beaten egg. Mix these ingredients until they are completely combined.
  5. Then, add the squash, onion and the greek yogurt mixture until the squash it coated. We like to use our hands to mix and coat the squash completely.
  6. Pour the mixture in a casserole dish and top with the rest of the Parmesan cheese and panko bread crumbs.
