Our obsession with using matcha in our baked goods started when we tried the matcha bread from Honeysuckle Catering cookbook! The flavor was so prominent and delicious.

Our friends that didnโ€™t like to drink matcha, absolutely loved when it was baked in the bread, so we knew that so many other people would like it too.

So, we decided to turn a traditional blondie recipe into a matcha flavored blondie! When we say that these green tea matcha blondies are out of this world flavorful and addicting, we arenโ€™t kidding!

You have to try them! We promise that even your friends who donโ€™t like to drink matcha, will love the taste of these yummy green tea matcha brownies.

    These matcha brownies have a delicious crispy top and edge, while the inside is moist and a little gooey (just like we like our brownies and blondies).

    What are Blondies?

    To be honest, we have learned to love blondies more than brownies. If you’ve never had one before, you may be wondering what they are.

    Blondies have the same texture and consistency of a regular brownie and are often called blonde brownies. The difference between a brownie and a blondie is that a blondie’s base is made of brown sugar rather than regular cane sugar. Blondies also don’t have cocoa powder in them to create the chocolatey flavor.

    We love the taste of them because the brown sugar gives them a delicious toasted vanilla flavor.

    What is matcha?

    Matcha is made from ground green tea leaves. The tea leaves are ground into a fine green powder, whisked in hot water and ready-to-serve drink. It has a bitter grassy taste, but it pairs so well with sweet lemonade, coconut milk or creamy oat milk.

    What’s in this Recipe?

    Matcha powder: Matcha powder is the star ingredient of this recipe. When we first tested the batter, we used 2 tablespoons of matcha, but decided to make the batch with 3 tablespoons instead. The added matcha powder takes these brownies up to another level!

    Brown sugar: As we mentioned before, the brown sugar base in blondies gives them a toasted vanilla flavor that is irresistible.

    Unbleached flour: We only ever use unbleached flour in our recipes, because it’s high quality and a better for you.

    Baking powder: Baking powder makes the blondies rise, so it’s a super important ingredient.

    Butter: We used melted, salted butter of this recipe. We love using salted butter in recipes that have a higher concentration of sugar, because it balances our the super sweet batter.

    Vanilla: The vanilla adds an extra touch of flavor and depth to these brownies.

    2 Eggs + 1 egg yolk: The addition of the eggs makes the blondies more chewy and rich. We added an extra egg yolk to the mix creates a fudgey consistency.

    Cornstarch: Adding cornstarch to these blondies is the secret gym to creating a chewy, thick consistency.

      Does matcha have caffeine?

      Matcha does have caffeine, and actually has more than double the amount of caffeine as green tea. For every 8oz of caffeine, there are nearly 70 mg of caffeine. One benefit of the caffeine from matcha, as opposed to drinking coffee, is that it gives you more energy for longer. With each cup of matcha, it provides you 4-6 hours of energy.

      Ingredients

      Units Scale
      • 1 cup butter (melted)
      • 1 3/4 cup brown sugar
      • 2 eggs + 1 yolk
      • 1 tsp vanilla
      • 2 1/2 cups flour
      • 2 tsp cornstarch
      • 1 tsp baking powder
      • 1 tsp salt
      • 3 tbps matcha powder

      Instructions

      1. Preheat oven to 350 and line 9 x 13 pan with parchment paper.
      2. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
      3. In a large mixing bowl, cream melted butter and sugar until combined.
      4. Add eggs, egg yolk, vanilla. Stir to combine. Once combined, add matcha powder to egg mixture until combined.
      5. Stir dry ingredients into wet ingredients until just combined.
      6. Spread batter into the bottom of the prepared baking sheet.
      7. Bake for 25-30 minutes (length will vary depending on how you like your brownies baked or how your oven bakes).
      8. Allow to cool for 10 minutes on a wire rack. Cut into squares ad enjoy with a cup of tea or coffee!
