Granola Recipe

  • 5 cups rolled oats
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/3 cup coconut sugar
  • 1 tbsp vanilla
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1/2 tsp salt

Yogurt Bowls

  • 1 cup greek yogurt or skyr
  • fresh fruit, berries, nuts, seeds (to top)


Instructions

Homemade Granola (optional but recommended!)

  1. Preheat oven to 325 F. Line baking sheet with parchment paper.
  2. Whisk coconut oil, maple syrup, coconut sugar, vanilla, cinnamon, ginger, and salt in a large mixing bowl.
  3. Add oats and coat the maple syrup mixture over the oats using a wood spoon.
  4. Dump and spread the hot mixture in an even layer across the prepared baking sheet. Press the oats firmly into the baking sheet using the back of the wooden spoon.
  5. Bake for 15 minutes, rotate the pan, and bake for another 15 minutes. Remove from oven and let granola cool for 1 hour to firm up and get crunchy (cooling completely is important so the granola breaks into larger clusters).
  6. Using your hands, break the granola into clusters. Transfer to a mason jar or air-tight container. 

Assemble Bowl

  1. Add one cup of greek yogurt or Skyrr to your bowl. Top with fresh fruit of your choice. We chose pomegranate seeds and blackberries on one bowl. For another we chose cara cara oranges and dried ginger. Add 1/3 cup of the homemade granola and enjoy. You can also drizzle with honey to add a bit more sweetness to the tart yogurt.
