Cookies and Cream Rice Krispies Treats

Description

Rice Krispies cereal and crushed Oreo cookies are folded into a buttery, gooey melted marshmallow mixture. And once cooled, are sliced into thick squares of melted goodness.


Ingredients

  • 1 stick salted butter
  • 2 16-oz bags of mini marshmallows
  • 8 cups Rice Krispies cereal
  • 1 cup chopped Oreos
  • 1 tsp vanilla extract/ vanilla bean paste


Instructions

  1. Start by lightly greasing a 9×13 pan with 1 tbsp softened butter and lining it with parchment paper.
  2. Roughly chop about 1 cup of Oreos (about 26 cookies). That way you have so larger and smaller pieces mixed into the treats.
  3. In a Dutch oven over medium heat, melt butter until bubbly and golden. Pour marshmallows into the pot and stir with a rubber spatula until completely melted. Be careful not to overcook because they melt quickly.
  4. Once melted, remove the mixture from the heat and mix in vanilla extract. Pour Rice Krispies cereal and cookies into the pot and stir until evenly incorporated. Make sure there aren’t any large clumps of melted marshmallow at the bottom of the pan. Remove from heat.
  5. Quickly, pour the Rice Krispies mixture into your greased pan and press down. Lightly wet or grease your hands and press them into the pan until evenly filled. Sprinkle top with extra chopped Oreo cookie pieces and gently press them into the top of the treats.
  6. Cover with foil or plastic wrap and chill in the freezer for about 15 minutes or at room temperature for about an hour to set before cutting.
