Garlic Thyme Mashed Potatoes with Caramelized Onions

Caramelized Onions

  • 6 tbsp butter
  • 2 onions
  • 1 tbsp thyme
  • 5 sage leaves
  • 1 garlic bulb (minced sautéed)
  • Salt

Mashed Potatoes

  • 5 lbs potatoes
  • 1 1/2 sticks butter
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/3 cup parmesan cheese
  • 1 tsp salt
  • Pepper


Instructions

Caramelized Onions

  1. Melt together 4 tablespoons butter and the onions in a large skillet over medium heat. Cook, stirring occasionally until softened, about 15 minutes.
  2. Add 2 tablespoons butter, thyme, and sage, garlic and season with salt and pepper. Cook another 2 minutes, then remove from the heat.

Mashed Potaotes

  1. Place potatoes in a large stockpot and cover with water; bring to a boil over high heat. Once at a rapid boil, reduce heat to medium-low, cover, and cook for 15 minutes, or until tender enough to pierce with a fork.
  2. Drain the potatoes well. Place potatoes in a large bowl; add in the roasted garlic cloves, butter, sour cream, cheese, heavy cream, salt, pepper and onion mix. Using a handheld electric mixer on low-speed, beat potatoes until light and fluffy. Taste and adjust salt and pepper as needed. Serve warm.
  3. Add the caramelized onions to the potatoes and fold them in using a spatula. Serve with your favorite main dish and enjoy!
