Scale
- 1 bag of corn tortilla chips
- 1 lb pulled pork
- 1/3 cup pickled onions
- 2 jalapeños, seeded and sliced
- 2 cups cheddar cheese
Homemade BBQ Sauce
- 3/4 cup Ketchup
- 2 tbsp Apple cider vinegar
- 2 tsp Smoked paprika
- 2 tsp Dijon mustard
- 1/3 cup Maple syrup
- 2 tbsp Worcestershire sauce
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1/4 tsp Salt
- 1/4 cup Water
Instructions
- Preheat oven to 425ºF.
- In a skillet over medium-high heat, whisk together ingredients for homemade BBQ Sauce. Bring the mixture to a boil and then reduce the heat to a simmer until thick. This could take 30-40 minutes. Let it cool at room temperature and store in a jar or other airtight container in the refrigerator.
- Assemble the nachos. Line a sheet pan with parchment paper and add a single layer of tortilla chips. Top with half of the pulled pork and cheese on the first layer. Add another layer of tortilla chips and repeat the layers of cheese and meat. Drizzle the top with BBQ sauce.
- Place nachos in the preheated oven and cook for 15 minutes. The nachos are done when the chips are crispy, slightly browned, and the cheese has melted. Remove from oven.
- Top with pickled onions, sliced jalapeños, and extra BBQ sauce. Enjoy hot.
