Almond Butter Frozen Chocolate Covered Banana Bites

Ingredients:

  • 23 bananas
  • 1 1/2 cups dark chocolate chips
  • almond butter (for layers)
  • pinch of salt
  • almond slices (for topping)
  • coconut flakes (for topping)


Instructions

  1. Cut bananas into 1/4 inch slices. On a parchment paper lined baking sheet, place your banana slices on the baking sheet. You can place them close together, but make sure they aren’t touching (They may freeze together). Freeze the slices for 30 minutes.
  2. Add a dollop of almond butter on top of every banana. Freeze the almond butter banana slices for another 30 minutes.
  3. In a double boiler, a double-boiler hack (see above) melt your  dark chocolate. Stir the chocolate consistently until it’s melted and smooth.
  4. Using a fork, dip the frozen almond butter bananas in the melted dark chocolate. Allow the chocolate to coat the banana and place the slice back on the baking sheet. Top with your favorite toppings (see some delicious topping suggestions below).
