Description

This chopped chicken salad is about to be your new go-to for lunches and snacking! Shredded rotisserie chicken is mixed with a blend of Greek yogurt, avocado mayonnaise, roughly chopped apples, celery stalks and seasoned with onion powder, garlic powder, lemon juice, and fresh tarragon.


Ingredients

  • 1 Rotisserie chicken, shredded
  • 2 celery stalks, chopped
  • 1 Granny Smith apple, chopped
  • 1/4 cup plain Greek Yogurt
  • 1/4 cup Mayonaise
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp lemon juice
  • 1 tbsp fresh tarragon, chopped
  • 1/4 cup sliced almonds


Instructions

  1. Remove meat from the rotisserie chicken. Peel apart larger pieces to shred the chicken. Place chicken in a large bowl. Shred the chicken into smaller pieces byhand or with an electric mixer. Shredding the chicken in an electric mixer with the paddle attachment is super quick and creates thin, even shreds of chicken.
  2. Chop the celery and apple and add to the bowl with the chicken.
  3. Mix in mayonnaise, Greek yogurt, onion powder, garlic powder, lemon juice, and tarragon until blended.
  4. Enjoy as is, spread on a toasted slice of bread or serve with crackers. Store in an airtight container in the fridge for up to 3-5 days.
