Easy Pumpkin Tiramisu

Description

Three delicious layers of espresso-soaked lady fingers, creamy pumpkin spiced mascarpone filling and dusted with cocoa powder and pumpkin spice.


Ingredients

Scale

1/2 cup pumpkin puree

1 1/2 cups heavy cream

16 oz mascarpone cheese

1/2 cup sugar

1 tbsp pumpkin pie spice

2848 lady fingers (depending on size)

2 cup espresso or stronger coffee

1 tsp vanilla

Homemade Whipped Cream

1 cup heavy cream

1 tsp vanilla

Pumpkin Spice Cocoa Dusting

1/4 cup dutch cocoa powder

1/4 tsp pumpkin pie spice


Instructions

  1. In an electric mixer with the whisk attachment, whisk together pumpkin puree, pumpkin pie spice, mascarpone and heavy whipping cream. Whisk on medium-high speed until soft peaks form.
  2. Prepare espresso and strong coffee for dipping the lady fingers. Pour espresso into a shallow bowl and add vanilla. Stir to mix. 
  3. Dip each lady finger, one at a time, into the coffee for 1-2 seconds max and place on baking dish in a single layer. When soaking the lady fingers, you want to make sure the they don’t get too soft and crumble. Line bottom of a 9×13 inch baking dish with the coffee soaked lady fingers in a single layer, making sure there are minimal gaps.
  4. Scoop 1/3 of the pumpkin mascarpone mixture on top of the lady fingers, spreading into an even layer. Add another single layer of coffee-soaked lady fingers on top and repeat with another 1/3 of the mascarpone mixture. Add a third layer of lady fingers and the last of the mascarpone. (Note: 3 layers will only work if you have a dish that is at least 3 inches deep. If you are using a shallower pan, only do 2 layers of lady fingers and pumpkin filling)
  5. The final layer is a thin layer of whipped cream. Add heavy cream and vanilla to the bowl of an electric mixer and whisk on high until stiff peaks form (3-5 minutes). Gently spread whipped cream on top of the tiramisu. 
  6. Using a sifter, dust the top of the tiramisu with cocoa powder and pumpkin pie spice mixture. 
  7. Cover with plastic wrap and chill tiramisu in the fridge for 2-3 hours before serving. Serve with coffee or tea!

Notes

Homemade pumpkin pie spice

  • 1 tbsp cinnamon
  • 1/2 tsp ginger
  • 2 tsp nutmeg
  • 1/2 tsp cloves
  • 1tsp all spice
  1. Mix all spices together in a bowl. Store any extra pumpkin spice in a spice jar/small jar.
