  • Total Time: 1 hour
  • Yield: 8 bagels 1x

Ingredients

Units Scale
  • 1 1/2 cup warm water
  • 1 pkg dry yeast
  • 4 cups bread flour
  • 1 tbsp maple syrup
  • 2 tsp salt

Bagel Water Bath

  • 8 cups water
  • 1/4 cup honey
  • 2 tsp baking soda

Egg Wash

  • 1 egg white
  • 1 tbsp water

Instructions

Make Bagel Dough

  1. Add warm water and yeast to a bowl, but do not stir together. Let the yeast sit for 5 minutes and let it proof. Once the yeast is bubbled a bit, stir to combine.
  2. Add bread flour, maple syrup and salt to the yeast mixture. Beat on speed 2 in a stand mixer for two minutes. The dough will look a little dry at this point.
  3. Remove the dough from the mixer bowl and place onto a floured surface. Knead the dough for 5 minutes.
  4. Place the dough in a lightly greased bowl (just pour a small amount of olive oil onto your hands and rub all around the inside surface of the bowl), cover the bowl with plastic wrap and allow the dough to rise in a warm area for 1 hour or until it’s doubled in size.

Cooking the Bagels

  1. Preheat your oven to 425°F.
  2. Once the dough has doubled in size, uncover and punch it down with your fist. Then roll the dough out onto a lightly floured surface and divide the dough into 8 even sized balls. Using your thumb, punch a hole through the middle and shape the dough into a bagel. Let the dough rest for a few minutes.
  3. Fill a large pot with 10-12 cups of water. Whisk in the honey and baking soda and bring the water to a boil. Drop 2 bagels in at a time and cook the bagels 1 minute on each side. Transfer the bagels to the prepared baking sheet, brush with egg wash and sprinkle with Everything But The Bagel seasoning.
  4. Bake the bagels in the oven for 12 minutes, rotate the pan and bake for 12 more minutes. The bagels should be golden brown in color. Let them cool for 15 minutes.
  5. Enjoy with your favorite cream cheese and cup of hot coffee or tea.
