What you’ll need for Easter Rocky Road Candy
- Semi sweet chocolate chips
- White chocolate chips
- Biscoff cookie butter
- Graham Crunch cereal
- Salted roasted peanuts
- Mini marshmallows
- Colored mini marshmallows

How to make Rocky Road
No bake desserts are the best! They’re so easy to make and very low maintenance, which we love around here! So grab a your ingredients, a large bowl and let’s hop in to the details!
Start by melting chocolate and Biscoff in 30 second increments in microwave. Heat chocolate in microwave safe bowl for 30 minutes making sure that you remove and stir. This will help to heat the chocolate evenly and make sure that you are not over heating the chocolate. Once your chocolate is smooth and melted, you are ready to mix the add ins.
Mix in your rocky road add ins. Using a rubber spatula, gently fold the marshmallows and cereal into the chocolate. Mix until the chocolate has evenly coated all everything.
Pour gooey rocky road into a parchment-lined loaf pan. Gently tap the loaf pan on the counter to knock out any air bubbles
Chill in fridge to set for 3-4 hours. The waiting is the hardest part! But it’s so worth it!
Slice rocky road and serve! Remove the rocky road from the loaf pan by pulling up on opposite sides of the parchment paper. Slice loaf into 8-10 slices and enjoy!

Tips for making Rocky Road
This recipe is already super simple, but here are a couple things we recommend to do before you make your recipe, to make it even easier when you’re assembling the candy.
- Measure out add ins beforehand. Once your chocolate is melted, you want to mix everything together before it hardens too much. Having everything measured will save you some time.
- Line your pan with parchment paper. This will create a sling to easily remove the rocky road from the pan after it sets.
- Grease the pan with cooking spray. Another way to make sure your rocky road doesn’t stick to the sides! Better to be safe than sorry!
Storing Rocky Road
Store rocky road in the fridge in an airtight container. It should be good for 2-3 weeks in the fridge.

Easter Rocky Road Candy
Description
Fluffy marshmallows, crunchy Golden Grahams, swirled in mixture of dark chocolate and white chocolate and topped with chocolate Cadbury eggs.
Ingredients
Chocolate layer
- 1/2 bag of semi sweet chocolate chips
- 1/4 cup biscoff cookie butter
- 1/2 cup golden grahams
- 1/2 cup marshmallows
- 1/4 cup peanuts
White chocolate layer
- 1/2 bag white chocolate chips
- 1/4 cup biscoff cookie butter
- 1/2 cup golden grahams
- 1/2 cup marshmallows
- 1/4 cup peanuts
- 1/4 cup Cadbury eggs, chopped (for topping)
Instructions
- Line a loaf pan with parchment paper, making sure you have enough to hang over the edges to remove. You can also lightly grease the pan with cooking spray to make sure it doesn’t stick to the sides after it sets.
- Melt chocolate and Biscoff in microwave, stirring every 30 seconds. Once your chocolate is smooth and melted, you are ready to mix the add ins.
- Mix in golden grahams, marshmallows and peanuts and stir until everything is evenly coated with chocolate.
- Repeat steps 2-3 with white chocolate mixture.
- Alternate scoops chocolate and white chocolate mixture. Add another layer on top, alternating semi-sweet and white chocolate again.
- Tap the mixture hard on the counter to knock out any air bubbles. Sprinkle top with chopped Cadbury eggs.
- Place in fridge to chill for 3-4 hours until set.
- Remove rocky road from the pan by pulling up on opposite sides of the parchment paper. Slice into about 8 thick slices and serve.
