Description

Crispy baked fries seasoned with Tajin and topped with minced garlic, grated Parmesan and chopped parsley.

Ingredients

Scale

4 large russet potatoes

1/2 cup tbsp olive oil

4 tsp tajin

2 tsp kosher salt

1 tsp black pepper

2 tbsp cornstarch

5 garlic cloves, minced

1/2 cup grated parmesan cheese

1/4 cup chopped parsley

Flaky sea salt, for topping

Instructions

  1. Wash, peel, and cut potatoes into strips. Place the potatoes in a large bowl of cold water and let them soak for 30 to 60 minutes. Drain the potatoes and pat them dry.
  2. Preheat oven to 425°F.
  3. In a large bowl whisk together olive oil, tajin, kosher salt, black pepper, and cornstarch. Add the potatoes to the olive oil mixture. Use your hands to coat the potatoes.
  4. Transfer the potatoes to a rimmed baking sheet. Evenly space the potatoes as much as possible so that you get an even cook and crisp.
  5. Bake for 15 minutes, flip the potatoes, and bake for another 15 minutes. Once the potatoes are golden and crispy, remove from oven. Immediately toss the hot fries with the minced garlic, and sprinkle with grated parmesan cheese, chopped parsley, and flakey sea salt.
  6. Use a spatula to scoop on a serving platter with a side of ketchup or your favorite dipping sauce.
