One thing about me is that I can not resist French fries. They are truly my kryptonite…lol. If I’m eating them with a burger, chicken strips, or as an appetizer, they’ll be gone in a matter of minutes. It’s hard to admit, but I have no control when it comes to eating those delicious crispy potatoes.
In honor of my cravings and proclaimed obsession with French fries, we wanted to create an elevated recipe on the American classic.
If I could choose any way to make my French fries, I would 98% of the time opt for garlic parmesan fries. We kept things simple by baking them in the oven and elevated the flavor profile with Tajin for an acidic kick.

Crispy Baked Tajin Garlic Parmesan Fries
Ingredient Snapshot:
- 4 Large Russet Potatoes
- Olive Oil
- Tajin
- Salt and Pepper
- Cornstarch
- Minced Garlic Cloves
- Grated Parmesan Cheese
- Chopped Parsley
- Flakey Sea Salt
Direction Snapshot:
- Clean, peel, and cut the potatoes. Soak in cold water for 30 minutes to 1 hour.
- Preheat oven to 450°F.
- In a small bowl, whisk together the olive oil, Tajin, salt, pepper, and cornstarch.
- Drain the potatoes, pour the olive oil mixture over the top, and use your hands to coat the fries.
- Evenly spread fries onto a rimmed baking sheet. Bake for 20 minutes, toss the fries and bake for another 20 minutes.
- Once removed from the oven, immediately add garlic, parmesan, and parsley on top.
- Transfer to a serving platter. Serve as an appetizer, with burgers or baked crusted chicken.

Two important factors make French fries crispy–oven temperature and cornstarch.
- Oven temperature: A high oven temperature creates a crispy outside and a soft inside.
- Cornstarch: Anytime we want to make our French fries super crispy, we add cornstarch to the seasoning mixture. This creates a crispy outside that you’ll love!

Tajin is a popular Mexican seasoning. It’s a blend of natural chili peppers, lime, and salt. It pairs great with chicken, fish, shrimp, steak, vegetables, grilled corn, and even fresh fruit.

Description
Crispy baked fries seasoned with Tajin and topped with minced garlic, grated Parmesan and chopped parsley.
Ingredients
4 large russet potatoes
1/2 cup tbsp olive oil
4 tsp tajin
2 tsp kosher salt
1 tsp black pepper
2 tbsp cornstarch
5 garlic cloves, minced
1/2 cup grated parmesan cheese
1/4 cup chopped parsley
Flaky sea salt, for topping
Instructions
- Wash, peel, and cut potatoes into strips. Place the potatoes in a large bowl of cold water and let them soak for 30 to 60 minutes. Drain the potatoes and pat them dry.
- Preheat oven to 425°F.
- In a large bowl whisk together olive oil, tajin, kosher salt, black pepper, and cornstarch. Add the potatoes to the olive oil mixture. Use your hands to coat the potatoes.
- Transfer the potatoes to a rimmed baking sheet. Evenly space the potatoes as much as possible so that you get an even cook and crisp.
- Bake for 15 minutes, flip the potatoes, and bake for another 15 minutes. Once the potatoes are golden and crispy, remove from oven. Immediately toss the hot fries with the minced garlic, and sprinkle with grated parmesan cheese, chopped parsley, and flakey sea salt.
- Use a spatula to scoop on a serving platter with a side of ketchup or your favorite dipping sauce.
