This creamy vegetable gnocchi soup is the ultimate comfort dish for dinner this winter!
Everyone needs a cozy soup recipe for warming up on a cold winter night. A creamy broth, veggies simmered in white wine and gnocchi pasta make a delicious soup perfect for a cozy meal at home. This simple Creamy Vegetable Gnocchi Soup would be perfect for a light holiday meal or a cozy weeknight dinner.
The overcast weather and cold temperatures this week just scream, “Homemade soup for dinner!”. Soups are always our go-to when are wanting to put minimal effort into a meal but still want a delicious dinner. All it takes to make is some chopping, seasoning and simmering!

What are the best broths for soup?
Choosing a soup broth should play off the other flavors in your soup. Three of the most common broths you will find at the store are vegetable, beef and chicken. For example, if you are making a vegetable soup pair with a vegetable broth. If you are adding chicken or other light meat to your soup, use chicken broth. If you are making a beef stew, use beef broth.
When is the best time to season my soup?
We love adding in fresh herbs and flavorful spices to our dishes to strengthen the flavor. We recommend you season as you simmer and sautéed your veggies before adding in the broth. This is going to allow the flavor to develop, so don’t have to season as much after cooking!
Why add wine to soup?
Acidity in soup is important! It helps to bring out the flavors of the dish. Think of it similar to salt in baking, where as salt will help amplify the flavors in the cookies or cake. Acid does the same thing for soup and wine is that acidic component. Wine is also delicious because has a delicate acidity and more complex flavor profile than a vinegar or lemon juice would have.
Ingredient Swaps
If you don’t have one of these ingredients available here are some simple swaps we recommend.

You can swap leeks for a white onion or shallots. Leeks are very similar to onions but can have a sweeter flavor. Good substitutes are yellow or white onion or a couple shallots.

You can swap wine with lemon juice. White wine adds a bit of acidity to help make the flavors of the soup pop. If you don’t have wine on hand, we recommend swapping with the juice of one lemon.

You can swap coconut milk for heavy cream. We prefer the flavor of coconut milk in this soup but if you don’t have it on hand, swap with heavy cream.
Creamy Vegetable Gnocchi Soup
Description
A creamy broth, veggies simmered in white wine and gnocchi pasta make a delicious soup perfect for a cozy meal at home.
Ingredients
2 tbsp olive oil
3 large carrots, chopped
3 celery stalks, chopped
1 leek, chopped finely (if you don’t have leeks you can sub with yellow onion)
2 cloves of garlic
1/2 cup dry white wine
3 cups kale, rough chopped
2 tsp fresh thyme
1 bay leaf
4 cups vegetable broth
1 cup coconut milk
1 pound of fresh gnocchi
Salt and pepper to season
Parmesan reggiano for topping
Instructions
- In a large pot over medium heat, start by sautéing carrots, celery, leeks until soft. Add in garlic and sauté for a couple more minutes (this helps to make sure the garlic seasons the veggies but doesn’t burn). Season with a little salt and pepper and thyme.
- Next add in the white wine and let it simmer, uncovered for about 5-8 minutes.
- Lastly, pour in vegetable broth and coconut milk and bay leaf, stir and lower to a simmer for about 20 minutes. Add in chopped kale and gnocchi, stir and let it cook covered for about 10 more minutes until gnocchi is cooked.
- Serve topped with parmesan reggiano, salt and pepper for taste and enjoy!
