Description

The perfect breakfast muffin for fall. Made with a cinnamon, vanilla batter, soft, sprinkled with soft, cinnamon apples and topped with brown sugar crumb streusel.


Ingredients

Cinnamon Apples

  • 2 Fuji apples, diced into small pieces
  • 4 tbsp butter
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Cinnamon Apple Crumb Muffins

  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • Cinnamon apples (already made)

Brown Sugar Crumb Topping

  • 2 tbsp butter, melted
  • 4 tbsp flour
  • 2 tbsp sugar
  • 2 tbsp brown sugar
  • 1/2 tsp salt


Instructions

  1. Make the cinnamon apples first. In a skillet, melt the butter. Then add the diced apples, brown sugar, cinnamon, and nutmeg. Sauté the apples until they are soft (about 5-8 minutes). Transfer the apples to a separate bowl to cool, while you prep the muffin batter.
  2. In a medium bowl, add flour, baking powder, cinnamon, and salt. Whisk the dry mixture until all the ingredients are incorporated.
  3. In a large bowl, mix eggs, sugar, butter, milk, vanilla, and sour cream together.
  4. Mix dry ingredients into the wet mixture. Then gently fold in the cinnamon apples.
  5. To make the streusel, combine butter, flour, sugar, brown sugar, and salt.
  6. Using an ice cream scoop or 1/4 measuring cup, scoop batter into a prepared muffin tin (you can grease the pan or add liners). Add streusel to the top of each muffin.
  7. Bake at 350ºF for 20-25 minutes. Remove the muffins from the oven and let them cool for 10 minutes.
