Description

These chocolate peanut butter s’mores bites are the perfect bite size desserts for a crowd. Served them for a game day party, dinner party with friends or for a holiday get-together.

  • 1 pkg break-and-bake peanut butter cookie dough
  • 24 mini Reese's peanut butter cups
  • 2 egg whites
  • 1/2 cup sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla bean paste

How to Make the Peanut Butter S’mores Bites

  1. Preheat oven to 350°F. Grease a mini muffin pan.
  2. Add one brake and bake cookie dough ball to each mini muffin tin. Bake the cookies using the directions on the package.
  3. While the cookies are in the oven, unwrap 24 mini Reese’s peanut butter cups and set aside.
  4. Once the cookies are done baking, allow them to cool for a couple of minutes. Then place the Reese’s cup in the center of the cookie. Cool the cookies on a wire rack for about 20 minutes.

How to Make the Homemade Marshmallow Cream

  1. Heat 3 cups of water in a pot. While the water is heating up, add the egg white, sugar and cream of tartar to a heat-resistant bowl.
  2. Once the water begins to boil, place the bowl on top and whisk until the sugar dissolve and the mixture starts to look frothy. Remove from the heat whisk in the vanilla.
  3. Transfer the mixture to a stand mixer or a hand held mixer, and whisk for about 5 minutes or until soft peaks form. Set aside to put on top of the drink.
  4. Using a spoon, scoop a dollop of marshmallow cream onto the top of the cookie. Garnish the top with some grate chocolate shavings or finely crushed graham cracker.
