Recipe Snapshot

  1. Chop tomatoes, onion and garlic
  2. Sauté garlic in oil. 
  3. Toss bruschetta ingredients in a bowl and chill. 
  4. Slice and toast French baguette in the oven.
  5. Rub each slice with garlic and sprinkle with parmesan while hot to melt the cheese.
  6. Top each crostini with a spoonful of bruschetta. 
  7. Plate and serve!

Fresh Bruschetta or Bruschetta in a Jar?

If you are seeing on crostini’s in an appetizer like this one, we recommend making fresh bruschetta. It is fresher and you can manage the amount of oil you add to the dish. This is a personal decision

There are some delicious store-bough bruschetta brands out there, but we find that the jarred bruschetta can be more oily and has more of a tomato-sauce-taste. We find that jarred bruschetta is best suited for mixing in pastas, on chicken or even on pizzas.

What vinegar do you use in bruschetta? 

Vinegar is going to add tanginess to the bruschetta and also helps to enhance the flavors in the appetizer. We recommend using a sweeter, milder vinegar. Here are some of our favorites to use in bruschetta: 

  • White Balsamic vinegar
  • Balsalmic vinegar
  • Red or White wine vinegar

How to serve bruschetta as an appetizer

In this recipes we are serving the bruschetta on top of crostini, which are small slices of toasted French bread.

You can also serve with larger slices of ciabatta bread. 

OR you can use it as a dipping sauce with pita bread.

Bruschetta and Garlic Parmesan Crostini

Description

Crispy parmesan French toast slices topped with tangy fresh tomato basil bruschetta. 


Ingredients

Scale

6 medium tomatoes (roma or heirloom), diced

1 tsp salt

1/2 chopped yellow onion, minced

1/2 cup basil chopped

1 tbsp red wine or balsamic vinegar

34 garlic cloves

1/4 cup olive oil

1 baguette of French bread, thinly sliced

4 oz parmesan cheese


Instructions

  1. Dice tomatoes and place in a strainer over a bowl, sprinkle with salt and toss. Let it sit and strain for 5 minutes while you sauté garlic.
  2. In a skillet over medium heat, Mince 2 garlic cloves and heat in olive oil until fragrant. Careful not to burn the garlic. It should be slightly brown.
  3. Add strained diced tomatoes, onion, chopped basil, garlic oil and vinegar to a bowl. Toss and let it marinate in the fridge for at least 15 minutes – 24 hours before serving. 
  4. Preheat oven to 400ºF. Slice French loaf into thin slices, about 1/4 inch thick. Arrange bread slices on a parchment lined baking sheet. Bake for 10-15 minutes until golden brown and crispy.
  5. While the bread is warm…Chop 2 garlic cloves in half and rub the tops of the bread slices with the garlic. Sprinkle some parmesan cheese on top to melt. 
  6. Top each slice with a spoonful of bruschetta.
