Oreo Cookie Layer

  • 30 Oreo cookies
  • 6 tbsp butter (melted)

Funfetti Cookie Layer

  • 3 cups flour
  • 1 tsp baking powder
  • 2 sticks butter (cold, cubed)
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup funfetti sprinkles
  • 1 can store-bought vanilla cream cheese frosting


Instructions

Funfetti Cookie Layer

  1. Preheat oven to 375°F. Butter and line pan with parchment paper.
  2. In a medium bowl, whisk together flour, salt, and baking powder. Set aside for later.
  3. Cube the 2 sticks of butter, toss them in your stand mixer and cream your butter on LOW speed, until it's a whipped texture.
  4. Then add the brown sugar and white sugar to the butter. Cream together on MEDIUM speed until blended together.
  5. Then, add the eggs and vanilla extract. Mix on MEDIUM speed until combined. Add your flour mixture 1/3 at a time, until fully combined. Then mix in your sprinkles.
  6. Transfer cookie dough onto plastic wrap, seal and place in the fridge to cool while you make the Oreo cookie layer.

Oreo Cookie Layer

  1. Add the Oreo cookies to a large plastic bag, seal and crush the cookies into a fine cookie dust with a rolling pin. **PRO TIP: You can totally use a food processor to do this as well.
  2. In a small bowl, add the Oreo Cookie crumbles and the melted butter. Mix until incorporated.

Assemble the Bars

  1. Press the Oreo Cookie crumbles into the bottom of the prepared baking pan. remove the cookie dough from the fridge, and press and spread the dough on top of the Oreo Layer.
  2. Bake the bars in the oven for 40-45 minutes. Once done baking, remove and allow to cool to room temperature before adding the frosting. Add a layer of frosting and some colorful sprinkles to the top.
  3. Cut the bars into squares and enjoy!
