We made this recipe to celebrate National Chocolate Chip Cookie Day!! But let’s be real, we think every day deserves a cookie! We are always suckers for cookies and probably make them more than any other dessert.

Several years ago, we started experimenting with paleo recipes, the first recipe we wanted to perfect was a solid chocolate chip cookie recipe. We make cookies more than any other dessert. We love the easy process of making cookies, scooping them out on the pan and eating them hot from the oven.

These are so tasty! They were so simple to whip up for an after-dinner treat. You won’t be able to help your self from going back for seconds! Also, you can easily double this batch of cookies if you are having a gathering with friends.

We have made these cookies countless times for friends and family and they’re always so shocked when we tell them these cookies are paleo. These cookies are that good!!

What’s in the paleo cookies?

Almond Flour: In paleo recipes, almond flour functions similarly to all purpose flour in traditional baking. Almond flour can add a nice nutty flavor to baked goods. Having a combination of almond flour with coconut flour creates the perfect combination of flours to create a chewy cookie.

Coconut Flour: Coconut flour is made from dried, ground coconut meat. It is higher in fiber, meaning the flour absorbs more liquid than other alternative flours. Thus, you do not need to as much to your baked goods. The coconut flour adds a little extra flavor and sweetness to these cookies that makes them so delicious.  

Coconut Sugar: Coconut sugar gives these cookies a slight sweet flavor. It is a great alternative to brown or cane sugar in these paleo chocolate chip cookies. After the cookies are baked, the coconut sugar seems to add a caramel flavor to the cookies.

Coconut oil: We used coconut oil for this recipe. Other good oil alternative for these cookies is ghee or Irish butter!

These grain free paleo cookie recipe is packed with nutty and chocolaty notes that comes together to make a decadent cookie. You will want to eat the whole batch!!

  • Total Time: 20 minutes
  • Yield: 0 cookies 1x

Ingredients

Units Scale
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp coconut oil (or unsalted butter (Note: if you use coconut oil and it is very soft/melty you may want to put it in the fridge for 10 minutes to harden a bit))
  • 3/4 cup coconut sugar
  • 1 egg ((at room temp))
  • 6 tbsp almond butter (Alt: your preference of nut butter)
  • 1 tsp vanilla extract (or vanilla bean paste)
  • 1/2 tsp almond extract
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Dry ingredients. In a medium mixing bowl stir together almond flour, coconut flour, baking soda, salt. Set bowl to the side.
  3. Cream fats and sugar. In a large mixing bowl add coconut oil and coconut sugar. Blend with electric mixer until combined.
  4. Add almond butter and vanilla and beat on medium speed until combined. Beat in egg and mix until incorporated.
  5. Add dry ingredients to wet mixture. Stir in flour mixture until combined.
  6. Stir in chocolate chips. Place bowl in fridge for 20 minutes to make dough firm before cooking.
  7. Line cookie sheet with parchment paper. Scoop Dough into 8 (or 16, whichever you choose!) dough balls and place on parchment paper.
  8. Place cookies in oven and bake for 10-12 minutes.

Notes

Note: These will be soft cookies when they come out of the oven, so I recommend leaving them on the cooking sheet for 15-20 minutes until they have cooled.

Serving tip: Best served warm with milk! 🙂
