Avocado toast: A food trend turned breakfast staple. It seemed like avocado toast was all the rage several years ago, but what started as a trendy breakfast has proven to withstand the test of time as a popular breakfast choice. Avocado toast is simple enough that anyone can make it, but you can also make it as elevated as you’d like.
Everyone seems to have their own version of an avocado toast. But we focused on keeping it simple and choosing flavorful ingredients to easily elevate your everyday breakfast. A thick slice sourdough bread topped with mashed avocado, sliced boiled eggs, and sprinkled with lemon juice, chives, flakey sea salt. It’s a delicious tangy and savory breakfast.
It’s not just a great breakfast, but can make a great meal for lunch or breakfast too!

What You’ll Need
Fresh sourdough loaf: We recommend buying a heritage or country sourdough loaf from your local bakery or supermarket. Sourdough has a yummy flavor and is sturdy enough to hold all the avocado toast toppings.
Avocados: Make sure you choose ripe avocados! See our tips below for ripening avocado quickly.
Eggs: We boiled eggs to top on avocado toast, but you can cook your eggs whoever you like – scrambled or fried are also yummy!
Lemons: Fresh squeezed lemon juice adds some tanginess and refreshing flavor to the avocado smash.
Feta: Feta has a rich, salty flavor that is delicious on avocado toast.
Chives: Adds a subtle onion flavor.
Red pepper flakes: Totally optional, but we add red pepper flakes to pretty much everything. We love a little heat!!
Tricks for Ripening Avocados
We’ve all been there… You go to the store and all the avocados on the shelf are hard as rocks. Well we have some tricks for speeding the ripening of your avocados.There are quite a few tips floating on the internet but these are our favorite ways to ripen avocados.
- Place on a windowsill. This is a super easy way to speed up the ripening of an avocado. The warmth of the sunlight will quicken the ripening.
- Brown paper bag with a banana or apple. I know it sounds strange, but as bananas and apples ripen, they release ethylene gas which causes the avocado to ripen quicker.
How to Easily Slice an Avocado
Slicing avocados can be tricky but we have some tips for safely cutting an avocado to avoid any injury.
- Using the tip of a sharp knife or an avocado slicer, slice the avocado, starting at the stem and continue the slice the avocado in half lengthwise.
- Twist and pull each half away from each other to divide the halves.
- Place the half with the pit on a cutting board. Using your sharp knife, hit the pit of the avocado. If you are using an avocado slicer, hit the pit with the pitter.
- Hold the avocado in one hand and your knife in the other. Gently twist the knife. The pit should come out cleanly.
- Using your knife, carefully slice the avocado in the shell, careful not to cut through the shell.
- Scoop out the insides with a spoon.
What type of bread is best for avocado toast?
Feel free to use any bread you have on hand. But we do have some recommendations on our favorite types of bread to use for your avocado toast.
We don’t recommend using sandwich bread because it will not be sturdy enough to hold all the toppings for your avocado toast. We also don’t recommend pre-sliced bread because it is better to have a thicker slice of bread for avocado toast.

Avocado Toast with Eggs Feta Cheese and Chives
Description
A simple savory breakfast for any day of the week. Sourdough bread topped with mashed avocado, sliced boiled eggs, and sprinkled with lemon juice, chives, flakey sea salt
Ingredients
- 1 slice sourdough bread
- 1 tbsp butter
- 1/2 avocado
- 2 eggs, boiled
- 1 tbsp lemon juice
- 2 tbsp feta cheese
- 2 tsp fresh chives, chopped
- Flakey sea salt
- Red pepper flakes
Instructions
- Start by boiling eggs (you can skip this step by buying pre-boiled eggs). Place eggs in a bot and fill with enough water to cover the top of your eggs. Bring water to a boil. Once boiling, remove from heat and cover for 12-15 minutes. Drain water and place eggs in an ice bath to cool before peeling. Note: You do not have to boil your eggs. You can also scramble or fry!
- Slice a thick slice of sourdough toast (1/2 inch – 1 inch thick). You can toast bread one of two ways. 1. Toast on Skillet: Heat a skillet over medium heat. Spread butter on slice of bread and toast for 4 minutes on each side until browned. 2. Toasting in toaster: Toast on a medium setting. Make sure to butter bread after toasting.
- Peel and slice eggs. Chop your fresh chives. Slice avocado
- Assemble toast. Using a fork, mash avocado on top of the toast. Drizzle with lemon juice. Sprinkle with feta cheese and chives on the avocado mash. Place egg on top and season with red pepper flakes and flakey seas salt. Enjoy!
