Chocolate Chip Almond Flour Banana Bread

  • 1 1/4 cup almond flour
  • 1 cup all-purpose flour (or gluten-free flour, or coconut flour if you want it grain free)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 4 overripe bananas (mashed)
  • 3/4 cup brown sugar
  • 1/4 cup butter (room temp)
  • 1/3 cup greek yogurt
  • 2 tsp vanilla
  • 3 eggs (room temp)
  • 1 cup chocolate chips

Whipped Cinnamon Butter

  • 1/4 cup butter
  • 2 tbsp milk
  • 1/2 tsp cinnamon
  • 1 tsp honey


Instructions

Chocolate Chip Almond Flour Banana Bread

  1. Preheat your oven to 350°F and line a medium loaf pan with parchment paper.
  2. Whisk together almond flour, flour, baking soda, baking powder, cinnamon and salt in a medium bowl.
  3. In a stand mixer, mix brown sugar, butter, greek yogurt on a med-high speed for 3 minutes. Add eggs in one at a time. Scrape the sides of the bowl as you go. Then mix in the vanilla.
  4. Slowly stir the dry mixture into the wet just until moistened and no visible flour remains. Mix in the mashed banana until just combined. Fold in the chocolate chips.
  5. Pour batter to your loaf pan or baking dish and bake for 50-60 minutes until deep golden brown and toothpick inserted into the center of the loaf comes out clean. Allow to cool completely in the loaf pan resting on a wire rack, then remove using the parchment paper to help you, slice and serve. Enjoy!

Whipped Cinnamon Butter

  1. In your mixer, using a whisk attachment, whisk butter, milk and cinnamon on low for 2 minutes or until the ingredients are mixed together. Then increase the speed to med-high and whisk the butter mixture for 3 more minutes.
