If you grew up on strawberry toaster waffles, consider these strawberries and cream waffles a grown-up version of the frozen breakfast favorites. They still bring all that nostalgic strawberry flavor – but fresher, brighter, and fluffier than anything from the freezer aisle. 

Powdered freeze-dried strawberries are blended right into the batter to give the waffles a burst of strawberry flavor in every bite without being overwhelming. The freeze-dried strawberry powder also adds a naturally pretty pink hue to the waffles. Fresh strawberries are also folded into the batter for little pockets of juicy strawberries throughout. 

The waffles wouldn’t be complete without a large dollop of homemade whipped cream and a heavy drizzle of maple syrup. Each bite is perfection – you get the crispy edges, a burst of fresh strawberries, the sweetness from the syrup, and the fluffy whipped cream for the perfect finish. 

They’re perfect for slow mornings, brunch with friends or anytime you want breakfast to feel a little more fun and joyful!

Tips for Making Perfect Waffles

  • Preheat your waffle iron. Make sure your waffle iron is hot before adding your batter to the iron. A hot iron is going to make those nice crisp edges. Preheat the waffle iron for about 10-15 minutes before cooking your waffles.
  • Avoid cold ingredients. The best waffles have an evenly blended batter. To get the best waffle texture, it’s let the eggs and milk reach room temperature before mixing them into the batter.
  • Grease the waffle iron with butter or oil. We have found that some non-stick sprays don’t work as well as greasing with butter. Use a pastry brush to brush some melted butter or oil over the surface of the waffle iron before making each waffle.
  • Keep cooked waffles warm in the oven. Nobody likes a cold waffle. To keep cooked waffles nice and warm, preheat your oven to a low temperature of 200ºF. Place cooked waffles on a baking sheet to stay warm while you cook the rest.

How to Make Strawberries and Cream Waffles, Step by Step

Step 1. Preheat the waffle iron.

You want to make sure your waffle iron is hot when you’re ready to make the waffles. So before you forget, turn your waffle iron on to preheat while you are making the batter. 

A hot waffle iron will also make a crispy outer edge on the waffles.  

Step 2. Make a strawberry-flour mixture. 

We wanted to make sure that there was a strawberry flavor in every bite. This is why there are freeze-dried strawberries blended into a fine powder. The powdered strawberries will be mixed into the flour mixture. 

Using a high-powered blender or a food processor, blend freeze-dried strawberries into a fine powder. Add the strawberry powder to a medium bowl and mix into the flour mixture – all-purpose flour, baking powder, baking soda, and salt – until evenly incorporated. 

Step 3. Mix wet ingredients. Then, mix in the flour mixture.

Next, whisk together wet ingredients in a separate bowl. Start by mixing butter and sugar, so that the sugar reduces the heat of the butter before you add the eggs and dairy. Once the butter and sugar are mixed, whisk in eggs and buttermilk.

Lastly, gently stir in the strawberry-flour mixture until a smooth batter comes together. You shouldn’t be able to see any large clumps of flour.

Step 4. Fold in chopped strawberries.

Lastly, fold in the chopped fresh strawberries until evenly blended. The batter will start smelling and looking so delicious at this point. Now on to cooking the waffles!

Step 5. Grease and cook waffles until golden brown.  

Using a pastry brush, grease the preheated waffle iron with a brush of butter or oil. We have found that this works better than non-stick sprays. 

Use 1/3-1/2 cup to scoop and pour the batter into the iron. Pour the batter in the center of the iron and use just enough to spread to the edges without spilling out the sides.

Step 6. Make whipped cream and prep toppings. 

These are strawberry and cream waffles, which means we need some cream! And a dollop of homemade whipped cream takes the waffles to a whole other level of delish!

You can definitely opt for store-bought whipped cream, but homemade will taste super fresh! The best part is it just takes a couple of minutes to make!

Start by adding 1 cup of heavy cream, a couple of tablespoons of powdered sugar for sweetness, and some vanilla extract to the bowl of a stand mixer with the whisk attachment. Whisk for several minutes until medium peaks form. It should be soft but still hold its shape.

Top each waffle with a dollop of fresh whipped cream, a sprinkle of fresh strawberry slices, and a drizzle of maple syrup. Yum!

How to know your waffles are done cooking

It should take anywhere from 3-5 minutes for your waffles to cook through. There are light indicators on most waffle machines, but they may not always be dependable. 

You will know they are done cooking when the outside edges are brown and crispy, and there isn’t any steam coming out of the edges. When the steam stops rising, it means that all the moisture has been cooked out.

How to store cooked waffles

Let the waffles cool completely before you store them. 

In the Fridge: Store in an airtight container or sealed plastic bag for up to 2-3 days. The waffles will likely lose their crispy texture in the fridge, but they will still taste delicious.

In the Freezer: Store in an airtight container or freeze-safe plastic bag in a single layer for up to 3 months. Separate layers of waffles with a piece of parchment or wax paper. 

Reheating leftover waffles

For the best texture, we recommend reheating leftover chilled or frozen waffles in a toaster, toaster oven, or oven. A microwave can make them mushy.

  • Toaster: Place them in the toaster on a medium setting and toast until they are warm and crispy.
  • Toaster oven: Reheat at 350ºF for 5-10 minutes until warm and crispy.
  • Oven: Preheat oven to 350ºF  and place on a baking sheet for 5-10 minutes until warm and crispy. We recommend flipping over halfway through.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup freeze-dried strawberries, blended into powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1.5 cups buttermilk
  • 6 tbsp butter, melted
  • 2 tbsp sugar
  • 1 cup strawberries chopped (plus extra for garnishing)
  • 1 cup maple syrup

Homemade Whipped Cream

  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp vanilla


Instructions

  1. Preheat the waffle maker while you start making your batter.
  2. First, use a food processor or high-powered blender to blend freeze-dried strawberries into a powder. This will give the waffles a yummy strawberry flavor throughout, plus a bit of a pink color.
  3. In a large bowl, whisk together flours, strawberry powder, baking powder, baking soda, and salt.
  4. In a separate, medium-sized bowl, whisk together eggs, buttermilk, melted butter, and sugar. Tip: Make sure butter is cooled a bit after being melted.
  5. Pour your wet mixture into your dry mixture and mix until smooth and you can’t see any large clumps of flour. Fold in chopped strawberries
  6. Grease the waffle maker using a pastry brush to brush with butter or oil! Using a 1/3 cup as a scoop, scoop batter into the preheated waffle maker. Cook until waffles are golden brown. A good indicator that they are done cooking is when the steam stops rising out of the machine. Repeat this step for the remaining waffles.
  7. Make homemade whipped cream. Add heavy cream, powdered sugar, and vanilla to the bowl of an electric stand mixer with the paddle attachment. Whisk on medium-high for 3-4 minutes until a fluffy whipped texture forms. Stop whisking when medium peaks form (they should be soft but still hold shape).
  8. Serve hot, topped with butter, maple syrup, and strawberry slices, and homemade whipped cream.
