We love anything and everything s’mores. There’s something so delicious about the combination of graham cracker, chocolate and marshmallow that is so addicting. We can never get enough.

One of our favorite ways to make a s’more is to swap the Hershey’s chocolate with a Reese’s peanut butter cup. We thought it would be fun to make a bite size dessert that was inspired by a Reese’s s’more, and we may go as far to say that these are even more addicting than a regular s’more.

These chocolate peanut butter s’mores bites are so easy to make. They are an easy bite-size dessert for a gathering with friends and family. Made with store-bought peanut butter cookie dough, mini Reese’s peanut butter cups, and topped with marshmallow cream. We guarantee they will be a crowd favorite!

Break & Bake Peanut Butter Cookie Dough: Using store-bought peanut butter cookie dough makes this recipe super easy and it tastes so delicious!

Mini Reeses Peanut Butter Cups: The mini Reese’s make these the cutest bite-size dessert.

Egg Whites: Egg whites are the fluffy base of the homemade marshmallow cream.

Sugar: The sugar sweetens the marshmallow cream and when it’s whisked together with the egg whites it forms the most delicious glossy marshmallow cream.

Cream of Tartar: The cream of tartar helps to stabilize the egg whites as they are whisked together.

Vanilla Bean Paste: Vanilla bean paste adds the most delicious vanilla flavor to the marshmallow cream.

How to Make the Chocolate Peanut Butter S’mores Bites

These are super simple to make and will take you 10 minutes to prepare and 10 minutes to bake! 

You’ll want to start by greasing a mini muffin pan (we love this one). Add one brake and bake cookie dough ball to each mini muffin tin. Bake the cookies using the directions on the package.

While the cookies are in the oven, unwrap 24 mini Reese’s peanut butter cups and set aside. Once the cookies are done baking, allow them to cool for a couple of minutes. Then place the Reese’s cup in the center of the cookie. Cool the cookies on a wire rack for about 20 minutes.

How to Make Homemade Marshmallow Cream

While the cookies are cooling, it’s time to make the homemade marshmallow cream. This is what makes these chocolate peanut butter s’mores bites come to life! It’s actually super easy to make too!

You only need four ingredients: 1 egg white, 1/4 cup sugar, cream of tartar and 1/2 tsp vanilla.

You’ll want to start by heating some water in a pot. While the water is heating up, add the egg white, sugar and cream of tartar to a heat-resistant bowl.

Once the water begins to boil, place the bowl on top and whisk until the sugar dissolve and the mixture starts to look frothy. Remove from the heat whisk in the vanilla.

Then transfer the mixture to a stand mixer (like this one) or a hand held mixer (like this one), and whisk for about 5 minutes or until soft peaks form.

Using a spoon, scoop a dollop of marshmallow cream onto the top of the cookie. Garnish the top with some grate chocolate shavings or finely crushed graham cracker.

Serve these bite size treats as game day appetizers or as a dessert for a gathering.
