These tangy grapefruit bars are super simple to make and only have 7 ingredients! Made with a layer of buttery shortbread crust, a tangy-sweet grapefruit filling and topped with a sprinkle of powdered sugar.

One of our all time favorite desserts are lemon bars. Growing up, our grandma would make them almost every time we visited. We credit her for getting us hooked on them!

We wanted to create a fun twist on the classic lemon bar. Using our grandma’s recipe, we chose to swap the lemon flavor for tangy grapefruit. The sour grapefruit blends beautifully with the sugary filling and makes a delicious fruity dessert.

What’s in this recipe?

Flour: The flour is used both in the buttery crust and in the filling to provide structure to the bars.

Powdered Sugar: The powdered sugar in the crust makes gives it the “melt in your mouth” effect that we love so much!

Salt: The pinch of salt breaks up the sweetness of the buttery crust.

Butter: The melted butter adds such a delicious flavor and texture to the buttery crust.

Eggs: The eggs provide a lot of the structure for the grapefruit filling.

Sugar: The sugar sweetens the tanginess of the grapefruit juice in the citrus filling.

Grapefruit Juice: Fresh squeezed grapefruit juice adds delicious flavor to the filling and gives the filling a vibrant pink color as well.

How to Make the Grapefruit Bars

First, you’ll need to preheat your oven to 350°F, and butter and line the sides of a 9 x 13 glass baking pan (we love this one) with parchment paper. We find that glass pans bake lemon bars the BEST!

Now it’s time to make the buttery crust. In a medium bowl combine melted butter, flour, powdered sugar and salt. Once the crust is combined, press the crust into the bottom of the pan. Bake for 20 minutes.

While the buttery crust is baking, it’s time to make the grapefruit filling. Mix the flour and sugar for the filling in a bowl. Whisk the eggs, sugar and grapefruit juice together until it’s well combined. Pour the filling over the baked crust and baked for 22-25 minutes. You want to cook it just enough, so the filling doesn’t jiggle.

Allow the bars to cool for 30 minutes-1 hour and then sprinkle with a light layer of powdered sugar. 

Lastly, remove the bars from the pan and cut into beautiful squares. Serve with a hot cup of tea or coffee. Enjoy with friends at a brunch, afternoon picnic or evening backyard party.

  • juice of 1 grapefruit
