How to Make White Bean Turkey Soup Step-by-Step
Step 1. Chop veggies and prepare your mise en place.
If you want to make this recipe easier than it already is, prep each ingredient before you actually start cooking.
Create a mise en place, or a ‘setup’ of your dish. Chop veggies, measure out broth, seasonings and open your canned beans and set them out. This way you have all your ingredients laid out to toss into the pot and cook.
Step 2. Cook meat and vegetables in a large pot.
Start by cooking ground turkey or turkey breasts in a skillet over medium heat. Season the meat with a dash of salt and pepper to add some flavor to the meat. Once the meat is done cooking, pour the meat in a bowl and set aside while you cook your veggies.
Note: If you choose to use turkey breasts, thinly slice them into bite-sized pieces before adding back into the pot.
In the same pot, sauté onion and bell peppers until they are soft.

Step 3. Add in garlic, jalapeño’s and spices.
This step will have your kitchen smelling so delicious!! Add minced garlic, jalapeños and seasonings to the dish. Mix into the veggies and sauté for a couple additional minutes until the mixture becomes very fragrant.
Step 4. Gently stir in the beans, turkey and broth to simmer for 30-ish minutes.
Last step is to add in proteins – beans and ground turkey – and broth. Stir the soup mixture together and reduce the heat to medium-low. Let the soup simmer for about 35 minutes.
Tip: Make sure to occasionally stir the pot to make sure the bits at the bottom of the pan aren’t burning. If you need to, reduce the heat a bit.

Can I swap turkey for chicken?
Definitely! This soup will taste just as delicious with ground chicken.
What beans can I use instead of great northern?
Navy beans or cannellini beans are white beans that very similar to great northern beans.

How to adjust the heat of the soup:
This soup can pack on the heat. And by heat, we mean the spice!! If you are not a fan of super spicy dishes, you can reduce the heat level a several ways.
- Make sure to deseed your jalapeños.
- Use 1/2 can of green chili’s instead of a whole can. We recommend to keep at least 1/2 a can of the green chilis because they add some depth to the soup.
- Omit out the chili powder.
How to Store, Freeze, and Reheat This Soup
Refrigerating – Let the soup cool before storing in an airtight container. Store in fridge for up to 3-4 days. Reheat on stovetop or in microwave until it it warm.
Freezing – Let soup cool completely in the fridge before freezing. Portion the soup into freezer-safe containers or freezer safe plastic bags. The soup will expand as it freezes, so make sure you leave 1-2 inches of room at the top of the bag for expansion. It will be good for up to 3 months.

Description
This White Bean Turkey Soup is cozy, spicy, and full of flavor with turkey, white beans, green chilis, and jalapeño. An easy, hearty soup recipe perfect for fall and winter nights.
Ingredients
- 2 cans great northern beans
- 1 lb ground turkey
- 6 cloves garlic, minced
- 1 yellow onion
- 2 green bell peppers, chopped
- 1 can green chilis
- 1 jalapeno pepper, chopped
- 2 cups bone broth
- 2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp coriander
- 1/2 tsp chili powder
- 2 tbsp lime juice
Extras:
- Avocados for topping
- Green chilis
- Cilantro
Instructions
- In a skillet over medium-high heat, brown ground turkey, occasionally stirring around and breaking up the meat as it cooks. Remove from heat and set aside.
- In a dutch oven or large pot, add olive oil, chopped onions, peppers and sauté until soft.
- Next add in minced garlic and sliced jalapeño. Stir into the onion mixture and sauté for 2-3 minutes until fragrant.
- Next add in seasonings – cumin, oregano, coriander, chili powder- stirring until vegetables are coated.
- Add in beans, cooked ground turkey and bone broth.
- Cover and turn heat to medium low to cook and simmer for 35-45 minutes. Occasionally stir to make sure the bottom of the pan isn’t burning. If it does start to burn a bit, reduce heat to low.
- Once cooked, serve with shredded cheddar cheese, green onions, cilantro and/or lime slices to top.
