How to make homemade rice krispies treats

In just 10-15 minutes, you can have warm gooey rice krispies treats ready to eat. Here’s what you need to do.

Melt butter and marshmallows.

Start by heating butter in a large pot or dutch oven. When the butter starts to melt and bubble, this is when you add in the marshmallows. Continue to stir the mixture until the marshmallows are cooked down. It could take several minutes to do. Once your marshmallows are completely melted, stir in vanilla extract before adding in the cereal.

Add in rice krispies cereal and stir until combined.

This will feel like an arm workout, but after a couple minutes of staring, the rice krispies should be pretty evenly mixed into the marshmallow mixture. Make sure you scrape to the bottom of the pan to make sure all the marshmallow has been mixed in.

Pour into your baking pan. 

Dump the mixture into a greased, parchment-lined baking pan. See tips for prepping your pan below. Make sure you scrape the sides of the dutch oven to get all the bits that stick to the side. You won’t want any to go to waste! Lightly wet your hands and press the mixture into the pan.

Let the mixture chill for 15 minutes. 

The mixture will need to cool and set in the fridge for at least 15 minutes until they are ready to be sliced. Use a knife to scrape around the edges of pan to loosen the treats edges. Lift the parchment paper on both sides of the pan to lift the treats out of the pan.

Slice and enjoy!

The rice Krispies treats should now be firm enough to slice through. Use a sharp knife to cut the the rice Krispies treats into squares. Serve and enjoy!

Tips for making rice Krispies treats

The recipe is super simple but here are some pointers to help prep and make the treats without a sticky gooey mess!

  1. Butter and line a pan with parchment paper. These are super gooey, so the butter will keep the marshmallow from sticking to the sides of the pan when you remove the rice krispies treats. The parchment paper will act as a sling to easily remove the treats from the pan. 
  2. Use a dutch oven or large pot. At first, when you add the marshmallows to the dutch oven, it will seem like you’ve added too much, but don’t worry! They will cook down quickly. If you do not have pot big enough, add half to start, melt them down a bit and add the rest.
  3. Remember to stir the marshmallow mixture! Stir to move the marshmallows around as the melt so that the bottom of your pan doesn’t burn. The treats won’t taste quite the same if there are burned bits.
  4. Lightly wet your hands when pressing the cereal treats into the pan. When you are ready to pour the rice krispies into the pan they will be very sticky. If you lightly wet your hands, you can press the gooey mixture down into the pan without much marshmallow sticking to your fingers.

Can you substitute marshmallows for marshmallow fluff?

We recommend you don’t do this for a couple reasons. For starters, we found the pre-made marshmallow creme or fluff can result in a dryer cereal treat, rather than a gooey one! Secondly, the mixture of the mini marshmallows, butter and vanilla add so much more flavor to the treats. 

How to store rice krispies treats

Let rice Krispies treats cool completely before storing. Store in airtight container, at room temperature for 2-3 days.

Ingredients

  • 1 stick salted butter
  • 2 16 oz bags of mini marshmallows
  • 9 cups rice Krispies cereal
  • 1 tsp vanilla extract/ vanilla bean paste
  • Flakey salt (optional)


Instructions

  1. Start by lightly grease a 9×13 pan with 1 tbsp softened butter and line with parchment paper.
  2. In a dutch oven over medium heat, melt butter until bubbly and golden. Pour marshmallows into pot and stir with rubber spatula until completely melted. Be careful not to overcook because they melt quickly.
  3. Once melted, remove the mixture from the heat and mix in vanilla extract. Pour rice krispies cereal into the pot and stir until evenly incorporated.Make sure there aren’t any large clumps of melted marshmallow at the bottom of the pan. Remove from heat.
  4. Quickly, pour the rice Krispies mixture in your greased pan and press down. Lightly wet or grease your hands and press the into the pan until evenly filled. Sprinkle top with flakey sea salt (optional) to add a nice balance of salty-sweet.
  5. Cover with foil or plastic wrap and chill in the freezer for about 15 minutes or at room temperature for about an hour to set before cutting.
