Our current obsession are these strawberry glazed donuts. Soft strawberry caked donuts with a crunchy crumb and glazed with homemade strawberry glaze made with fresh strawberries.

Recipe Snapshot

  1. Make dough and chill for at least 1 hour or overnight. 
  2. Roll out dough and cut out donuts.

Butter
Vanilla extract
Milk
Strawberries

All purpose flour

Egg yolks
Baking powder
Salt
Sour cream

How to Fry Donuts

If you’re new to frying in oil over the stove, don’t worry! It’s not as intimidating as it seems. Follow these steps to perfectly fry the donuts. 

  1. Fill a deep skillet or dutch oven with oil 2 inches deep. 
  2. Heat the oil to 325ºF on medium heat. 
  3. Place 2 donuts in the pan at a time. Fry on each side for a couple minutes each, until the outside is golden brown.
  4. Remove and place on a wire rack to cool down. Place a paper towel underneath the rack to catch the excess oil.
  5. Repeat steps 3 & 4 for the rest of the donuts.

Tips for Deep-frying

Test a scrap piece of dough. To get comfortable with frying, cut a scrap piece of dough and fry it in the oil before cooking the batch of donuts. 

Keep your oil between 325-350ºF. The temperature will fluctuate while you are cooking as you add and remove the donuts when frying. If you notice the dough is getting too brown when cooking, slightly decrease the temperature. If the dough is taking more than a couple minutes to brown on each side, increase the heat a bit. 

Flip and remove donuts with a skimmer ladle. The metal scoop and long handle will allow you to easily and safely add and remove the donuts from the oil.

Turn off heat if oil smokes or catches on fire. Do not put water on the fire. Liquid will cause the flames to spread.

Use an oil with a high smoke point. We recommend vegetable oil for larger batch frying because it is cheaper and has a good flavor for frying dough. 

Have your pot lid close by. With frying, there is always the risk of a fire. If the oil catches on fire, you can put out the flames by putting the lid on the pot to smuggle the fire. 

Do not pour oil down the sink. After frying, pour the oil into a container and dispose of it.

How to store strawberry glaze donuts…

Make sure the donuts are completely cool before storing. The donuts are best if eaten the day of, but if you have any left overs, we recommend the following solutions for storing. 

Room temperature: Store in paper bag or airtight container for 1-2 days.

Fridge: Store in container for up to 5 days.

Strawberry Glazed Donuts

Description

Soft strawberry cake donuts with a crunchy crumb and glazed with homemade strawberry glaze made with fresh strawberries. 


Ingredients

Scale

Strawberry Donuts

3 cups all purpose flour

1/2 cup sugar

3 egg yolks

1 tsp baking powder

1 tsp salt

3/4 cup sour cream

1/2 cup strawberry jam

Vegetable oil for frying

Strawberry Glaze

2 cup powdered sugar

3 tbsp butter, melted

1 tsp vanilla extract

2 tbsp milk

1/4 cup strawberries, chopped


Instructions

  1. In a medium bowl, add dry ingredients – flour, baking powder and salt – and stir together. 
  2. In a stand mixer with paddle attachment, beat butter and sugar together until smooth and creamy. 
  3. Add egg yolks and beat until smooth. Add in sour cream and strawberry jam and mix until just combined. 
  4. Add half of the flour mixture and mix on low speed until combined. Add last half of flour mixture and mix until just combined. 
  5. Scoop ought out of bowl onto a sheet of plastic wrap. The dough will be sticky. Wrap in plastic wrap and chill for at least an hour or overnight if you make ahead. 
  6. Once dough is chilled, heavily flour a surface. Sprinkle flour on top of dough and gently work flour into the dough until it isn’t sticking to the surface. 
  7. Roll the dough out 1/2 and inch thick. Cut out with donut cutter or cookie cutters (one small and large). 
  8. Heat oil in dutch oven about 2 inches deep. Use a thermometer to measure temperature of oil. Heat the oil to 325ºF. 
  9. Once the oil reaches temperature, put 2 donuts in the oil at a time. Fry for a couple minutes on each side until they are golden brown. Check to make sure they don’t burn. 
  10. Transfer the cooked donuts to a wire rack with a paper towel-lined pan underneath to catch the oil. Repeat the steps 9-10 for the rest of the donuts.
  11. While the donuts cool a bit, make the glaze. Blend strawberries in a high powered blender (we used a Nutribullet) until smooth. In a bowl, add powdered sugar, melted butter, milk and vanilla stir to combine. Add in strawberries last and stir until combined. If you need to make the glaze thicker, add some more powdered sugar a couple tbsp at a time until it reaches the thickness you want. 
  12. Dip each donut in the glaze and place back on the wire rack to drip dry. Once all are glazed, let them set for a couple minutes and enjoy!!
