Funfetti and coffee cake?! The pairing we never knew we needed until now!!

I think we all can agree that anything with sprinkles is more fun! There is just something so childlike, happy and nostalgic about anything funfetti or birthday cake flavored. If you’re a kid of the 90’s or early 00’s, I think you probably fall victim to these feelings because almost every party growing up involved funfetti cake or birthday cake ice cream. I know if anything “birthday cake” or “funfetti” is on a menu, I am immediately ordering it. Anyone else do this too?!

This funfetti coffee cake is a fun twist on our Bakery Style Coffee Cake recipe. A fluffy sour cream funfetti cake, filled with a layer of cream cheese and topped with a funfetti crumble. It’s a perfect festive treat for a birthday breakfast or just to make for a fun treat when you’re needing a little serotonin boost! Because there’s always an excuse for funfetti!

Recipe Snapshot

How to Make a Perfect Funfetti Coffee Cake

Make Coffee Cake Crumble

You want to start by making the yummy crumble because it will have to chill in the fridge for a bit. All you need to do is add the crumble ingredients to a bowl and mix with a for or with your hands until it reaches a crumb texture. 

This coffee cake crumble is more dry than a streusel but that is what is so great about a bakery-style coffee cake.

Make the Cake Batter

Make sure you have two bowls to separate your dry and wet ingredients. 

First, add your dry ingredients to a medium bowl and whisk to combine. Next you will want to add the wet ingredients in a large mixing bowl and mix until combined. Once combined, you will slowly pour in your dry mix while mixing until all flour ins evenly incorporated. 

The batter will be thick, but that is what gives the cake the density of a bakery-style coffee cake.

Make Cream Cheese Filling

Unless you want an intense arm workout, we recommend you either use a stand mixer or an electric hand mixer for this step. Ha!

In a stand mixer with whisk attachment, add softened cream cheese, egg, flour and sugar. If you don’t have a stand mixer, a hand mixer will work perfectly. Whisk all your ingredients together and set aside.

Layer the Cake!

We recommend using a springform pan. This will make removal from the pan SO easy! Start by buttering and lining the bottom of the springform pan with parchment paper. 

First add half of the cake batter to the bottom of the cake pan and spread in an even layer along the bottom of the pan. Next pour your cream cheese filling over the top and spread in an even layer. Add the remains half the batter on top of the cream cheese and spread in an even layer on the top. Lastly, top with your crumble. You can be extra generous with the crumble!! The more crumble, the better the coffee cake. 😉

Coffee Cake FAQ

Can you freeze coffee cake?

Yes you can! If you don’t plan on eating the whole coffee cake in a week or want to save some for later, you can freeze the cake for up to 3 months.

Although you plan on eating the cake within 7 days, it should be okay to keep in the fridge without drying out too much.

How to properly freeze cake: Allow the cake to cool completely before storing. Start by slicing the cake into individual portions and wrap each peeve in plastic wrap. Next put the wrapped cake slices into a freezer safe storage bag for freezing. 

How do I reheat frozen coffee cake?

Note: we recommend slicing the coffee cake before freezing it. 

Preheat oven to 350°F. Remove the plastic wrap from a slice of cake and wrap in aluminum foil. Aluminum foil is the best way to keep moisture in the cake and prevent it from drying out. Place on baking sheet and heat for 8-10 minutes until warm to the touch. Remove and enjoy. 

We also don’t recommend reheating in the microwave because it will likely mess up the crumb of the cake and structure of the crumble.

Funfetti Coffee Cake with Cream Cheese Filling

Ingredients

Sprinkle Streusel

1/2 cup sugar

1/4 cup brown sugar

1/4 tsp salt

1 1/2 cup all purpose flour

1/2 cup butter

1/3 cup sprinkles

Funfetti Coffee Cake

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/3 cup assorted sprinkles

3 large eggs

1 cup sugar

1/3 cup butter, softened

1 cup sour cream

1 tsp vanilla

Cream Cheese Filling

8 oz cream cheese, softened

1/4 cup sugar

1 tbsp flour

1 egg


Instructions

  1. Preheat oven to 350°F and butter a cake pan.
  2. First, make the sprinkle streusel. In a medium bowl, combine all ingredients to a bowl and mix together with a fork or with hands until a crumble texture forms. Place in fridge to chill while you make your cake batter.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt and sprinkles. Set aside.
  4. In a medium bowl, whisk eggs. Add sugar, softened butter, sour cream and vanilla. Mix until combined.
  5. Next, add dry mixture into the wet mixture and stir to incorporate. You want all clumps removed from batter but you don’t want to over mix.
  6. To make the cream cheese filling, combine softened cream cheese, sugar, flour and egg. Mix until combined.
  7. Add half the batter to your buttered cake pan. Spread a layer of the cream cheese and add half of the crumble on top of the batter. Next add the last half of the batter on top of the crumble-cream cheese layer, spreading the thick batter to meet the edges of the pan and make sure all surfaces are covered.Top with the remaining crumble.
  8. Bake for 40 minutes. Remove from oven and cover with foil to bake for 10 more minutes. (You can test doneness by sticking a toothpick or fork into the center. If it removes clean, it is done.)
  9. Once cake is done, cool and serve with a large cup of coffee!!
