Lucky Charms Rice Krispie Cereal Treats

A nostalgic combo of two childhood favorites: Lucky Charms and Rice Krispie Treats! These lucky charms rice krispie treats are guaranteed to take you right back to childhood. Each cereal treat square is packed with a blend of lucky charms and rice krispie cereal, held together with an extra gooey, buttery marshmallow fluff.

These cereal treats are one of our go-to’s party treats when we are on a time crunch. They are seriously so simple and take just 15 minutes to make. And you will likely have a majority, if not all of the ingredients on hand!

Lucky Charms Rice Krispie Cereal Treats

Direction Snapshot:

1. Melt butter and marshmallows. 

2. Stir in cereal. 

3. Pour in a pan and chill to set.

Ingredients:

  • Mini marshmallows: We find that smaller marshmallows will melt faster and more evenly. We also don't recommend swapping marshmallows for pre-made marshmallow creme/fluff because it can result in a dryer cereal treat, rather than a gooey one!
  • Rice Krispies Cereal: Rice cereal adds a light texture to cereal treats. We love the blend of both cereals together!
  • Lucky Charms Cereal: Who doesn’t love lucky charms?! The frosted cereal and colorful marshmallows add a nice crunch and fund color to the cereal treats.
  • Salted butter: We like the taste that salted butter gives rice krispie treats. It helps to counter act the super sweet flavor of the treats.
  • Vanilla bean paste: Adds a yummy flavor to the marshmallow cream. It really makes all the difference!! If you don't have vanilla bean paste, just use vanilla extract.

Can you substitute marshmallows for marshmallow fluff?

We recommend you don’t do this for a couple reasons. For starters, we found the pre-made marshmallow creme or fluff can result in a dryer cereal treat, rather than a gooey one! Secondly, the mixture of the mini marshmallows, butter and vanilla add so much more flavor to the treats. 

Tips for Success:

  • Easy removal from pan: Greasing the pan is important to make sure the marshmallows don’t stick to the sides. And once you cut the treats, they will be easier to remove from the pan. For suer easy removal, we recommend greasing and lining with parchment paper.
  • For thicker rice krispie treats: Opt for a smaller pan, like an an 8x8 square pan. This will make the batch smaller, but will result in very thick rice krispie treats. If you do decide to make thicker cereal treats, allow them to set for about 10 extra minutes.
  • Quicker Chill Time: Ideally, you’d want to let them cool at room temperature for an hour before cutting and serving. But, if time is not on your side, pop them in the fridge or freezer for about 10 minutes to set quicker.

How long can you keep homemade rice krispie treats?

If these last more than a couple hours (Ha!) , they will be good at room temperature, in an airtight container for 2-3 days.

We have a couple sets of these glass airtight and leak proof containers and they are amazing for storing any left overs.

Quick and easy homemade lucky charms rice krispie treats with lots of super gooey marshmallow cream!


Ingredients

Scale

1 stick salted butter

2 16 oz bags mini marshmallows

3 cups rice krispies cereal

6 cups lucky charms cereal

1 tsp vanilla bean paste/vanilla extract


Instructions

  1. Start by lightly grease a 9×13 pan with 1 tbsp softened butter and line with parchment paper.
  2. In a dutch oven over medium heat, melt butter until bubbly and golden. Pour in your marshmallows and stir with rubber spatula until completely melted. CAREFUL not to overcook! They melt quickly!
  3. Once melted, remove the mixture from the heat and add in vanilla. Mix to incorporate. Pour your rice krispies and lucky charms into the pot and stir until evenly incorporated. Remove from heat.
  4. Quickly, pour the krispie mixture in your greased pan and press down. (Tip: Lightly wet or grease your hands and press the into the pan until evenly filled.)
  5. Cover with foil or plastic wrap and chill in the freezer for about 15 minutes or at room temperature for about an hour to set before cutting.

Notes

Note: If you are not using salted butter, add in 1/4 tsp salt into the melting marshmallows.
