Life is like a box of chocolate fudgy brownie bites!! These valentines fudgy brownie bites with strawberry ganache are a festive twist on our tried-and-true brownie recipe!!

We thought there was nothing better than store-bought brownie bites until…we cracked the brownie code with these fudgy brownie bites. They are everything you want in a brownie: dense and fudgy center, a crinkly top and a rich chocolate flavor. And since we’re serving these up for valentines day, we had to top with a festive strawberry ganache and sprinkles. Chocolate pairs perfectly with just about anything, but we think the best entree pairings are either Italian or Asian-inspired dishes

What you need...

Brownie Bite Batter

  • Butter
  • Dark Chocolate Chips 
  • Brown Sugar
  • Eggs
  • Dark Cocoa Powder
  • Salt
  • All Purpose Flour

Strawberry Ganache

  • White Chocolate Chips
  • Heavy Cream
  • Strawberry Preserves
  • Red Gel Food Coloring (optional)
  • Festive sprinkles

How to Make the PERFECT Brownies EVERY TIME!!

No one likes a dry and burned brownie!! There could be some reasons why your brownies are turning out subpar. Good news is, we have some tips to make sure that your brownies come tasting and looking perfect every time!!

  1. Use REAL chocolate and cocoa powder!! Using dark chocolate chips and cocoa powder makes a super rich chocolate flavor to the brownies and also creates that delicious fudgy texture.
  2. Do not over mix the batter. Over mixing the batter can create a tougher brownie. For a soft brownie, at each step, stir just until combined.
  3. Butter AND line the baking pan with parchment paper. Start by rubbing 1 tbsp of butter around the pan, making sure all surfaces, corners and edges are covered. Next, take a sheet of parchment paper and place in the pan. This will help you SO much when cleaning out the pan after baking!! 
  4. Avoid tough brownie edges!! No body likes a corner brownie because they are typically the toughest edges to chew. But we have a trick for you to make sure the edges do not get too tough. The key step: Let the brownies cool for about 10-15 minutes before removing them from the pan to cool completely. 
  5. Make the perfect crinkle top! Follow our directions below for the most perfect brownie crinkle top. The best way to get the desired brownie crinkle is to whisk the eggs into your sugar and chocolate one at a time, making sure that each egg with whipped into the sugar mixture.

Helpful Tips: 

  • Short on time? You can achieve the same look with store-bought brownies! We have found that Ghirardelli brownie mixes are the closest to our homemade fudgy brownies.
  • Use fruit and vegetable cutter for the perfect brownie bite shape! The grippy, raised edge makes them easier to remove when cutting out heart shapes. 
  • Find a tried-and-true brownie pan. We have a couple favorite pans for cooking brownies. We go back and forth between both of these pans when cooking brownies and dessert bars. For this recipe, we used Non-Stick OXO Pan. We love how light weight their aluminized steel pans are and they are also non-stick, which makes clean up easy. If you’re looking for something that will last a lifetime, we love Le Cruset’s baking dishes. The enameled stoneware is heavier to lift and requires a bit more care but the versatility and durability makes them well worth the penny!!

Adorable heart-shaped brownie bites with a dense, fudgy center and topped with a delicious white chocolate strawberry ganache.


Ingredients

Scale

Brownie Bites Batter

2 sticks butter

12 oz chocolate chips

1 1/2 cups sugar

1 1/2 cups brown sugar

6 eggs

1/2 cup black cocoa powder

1 tsp salt

1 1/4 cups flour

Strawberry Ganache

12 oz bag white chocolate chips

1/4 cup + 2 tbsp heavy cream

4 tbsp strawberry preserves

1 drop red gel food coloring

Valentines sprinkles


Instructions

Brownie Bites

  1. Preheat oven to 350°F and prep a 11×9 baking pan by buttering the pan and lining the parchment paper. 
  2. In a small saucepan over low heat, melt butter and chocolate chips. Remove sauce pan from heat until it is just melted.
  3. Remove from heat and whisk in sugar and eggs, one at a time. Pour into a medium bowl and mix in cocoa powder and salt. Next add in flour and fold into the batter with a spatula until the flour is fully mixed in. 
  4. Our into brownie pan and cook for 45-50 minutes until baked through. Remove from the oven and let it cool in the pan for 15 minutes. Gently remove the brownie sheet from the pan by grabbing either side of the parchment paper and placing on a cooling rack to cool completely. 
  5. While the brownies are cooling, make your strawberry ganache. 
  6. When the brownies have cooled completely, cut out heart-shapes in the brownie sheet using a heart-shaped cookie cutter (veggie cutters work best because they have a grip and small handle to lift out – read post above for our recommendation.)Try to cut shapes as close to each other as you can to help reduce waste and make as many brownie bites as you can.
  7. Remove the excess brownie pieces and save to enjoy later or discard. Top with strawberry ganache and sprinkles. Serve to your galentines or valentine and enjoy!!

Strawberry Ganache

  1. Fill a double boiler/ small pot with 2 inches water. Over medium heat, bring water to a low boil. Once at a low boil, rest double boiler top (If you do not have a double boiler and are using a small pot, find a glass bowl to place on top that is a bit wider than the edge of the pot). 
  2. Add white chocolate chips and heavy cream to double boiler. Keep whisking until evenly melted and mixed together. As soon as the chocolate melts, remove from heat and whisk in strawberry preserves 1 tbsp at a time. Add a drop of red food coloring to give a brighter pink color. Whisk until combined. Let it cool for about 15 minutes before spreading on the brownies.
