A sour cream cinnamon cake, swirled with cinnamon sugar and topped with a thick cinnamon and sugar crumble. It is perfect for a brunch with friends or even a dessert for a family gathering. Preheat the oven, brew a pot of coffee and let’s bring your favorite bakery treat to the comfort of your home.

What is Coffee Cake Made of?

Contrary to the name, no coffee is involved in the baking of this cake! But there are some yummy ingredients that make this bakery style coffee cake five-star! You will need the following for this recipe:

Dry Ingredients
  • All Purpose flour
  • Baking Powder
  • Salt
  • Brown sugar
  • Cinnamon
Wet Ingredients
  • Eggs
  • Butter
  • Milk
  • Sour Cream
  • Vanilla bean paste or extract

How to make the best bakery style coffee cake?

Make Cinnamon Sugar Crumble!
  • You want to start by making the yummy cinnamon sugar crumble because it will have to chill in the fridge for a bit. All you need to do is add the crumble ingredients to a bowl and mix with a for or with your hands until it reaches a crumb texture. Two things we love about this crumble are the thickness and the added spices to elevate the cake. Along with cinnamon, we threw in a dash of nutmeg and cardamom and it gives the crumble a more robust flavor. This crumble is dryer than a streusel but that is what you want for this bakery-style cake!!
Make the Cake Batter!
  • The next step is making your delicious coffee cake batter. First, add your dry ingredients to a medium bowl and whisk to combine. Next you will want to add the wet ingredients in a large mixing bowl and mix until combined. Once combined, you will slowly pour in your dry mix while mixing until all flour ins evenly incorporated. The batter will be thick, but that is what gives the cake the density of a bakery-style coffee cake. It should smell nice and amazing at this point and may be hard to resist taste-testing. Ha!
Layer the Cake!
  • Using a buttered cake pan, you will start to layer your cake. There will be two layers of cake and two layers of crumble. Add half of your cake batter to the bottom of the cake pan and spread in an even layer along the bottom of the pan.  Next sprinkle a generous layer of crumble of the cake batter before spreading the other half of the batter on top. This is going to create a beautiful swirl of cinnamon sugar throughout the cake. Top with the remaining crumble! There will be a lot of crumble in this cake but that is what makes these cake so special!!

Ingredients

Units Scale

Bakery Style Coffee Cake Batter

2 cups all purpose flour

2 tsp baking powder

1/2 tsp salt

3 eggs

1/2 cup brown sugar

1/2 cup butter

1/4 cup milk

1/2 cup sour cream

1 tsp vanilla

2 tsp cinnamon

Cinnamon Sugar Crumble

1/2 cup sugar

1/4 cup brown sugar

1/4 tsp salt

1 1/2 cup all purpose flour

1/2 cup unsalted butter

1 tbsp cinnamon

1/4 tsp nutmeg

1/4 tsp cardamom


Instructions

  1. Preheat oven to 350°F and butter a cake pan.
  2. First, make the cinnamon sugar crumble. In a medium bowl, combine all ingredients to a bowl and mix together with a fork or with hands until a crumble texture forms. Place in fridge to chill while you make your cake batter.
  3. In a large bowl, mix together your dry ingredients. Add flour, baking powder, salt and cinnamon and whisk together. Set aside.
  4. In a medium bowl, whisk eggs. Add brown sugar, softened butter, milk, sour cream and vanilla. Mix together. 
  5. Next, add dry mixture into the wet mixture and stir to incorporate. You want all clumps removed from batter but you don’t want to over mix. This could affect the texture of the cake.
  6. Add half the batter to your buttered cake pan. Sprinkle half of the crumble on top of the batter. Next add the last half of the batter on top of the crumble layer, spreading the thick batter to meet the edges of the pan and make sure all surfaces are covered.
  7. Lastly, top with the remaining crumble. Bake for 40 minutes until done. Remove from oven and cover with foil to bake for 10 more minutes. (You can test doneness by sticking a toothpick or fork into the center. If it removes clean, it is done.)
  8. Once cake is done, cool and serve with a large cup of coffee!!
