Weekend breakfasts won’t be the same in your house after making these Spicy Bacon Egg and Cheese Tex-Mex Breakfast Sandwiches!

Rich and buttery croissants, a creamy spicy avocado spread, eggs, bacon and fresh tomato slices to make a delicious filling Tex Mex Breakfast Sandwich. These breakfast sandwiches take us back to our Texas roots and have become our new favorite breakfast of the summer.

We were born and raised in Texas, so our idea of comfort food is tex-mex. So many memories growing up were around a table with chips and queso. We crave the blend bold flavors in the tex-mex cuisine, like the spicy jalapeños, fresh cilantro, lime and cumin seasoned dishes. We took all the flavors that taste so much like our comfort food and packed them in these warm breakfast croissants.

What’s in this recipe?

Croissants: There’s no denying that fresh buttery croissants make the best breakfast sandwiches, because they do! We picked up our beautifully crafted croissants at a local bakery, but you can easily grab some croissants in the bakery section of your local grocery store. 

Avocados: You can’t have tex-mex without incorporating avocados! It’s a staple ingredient!Fresh avocados are used to make a delicious spicy avocado spread.

Jalapeño: Jalapeño adds a kick of spice to these sandwiches. You can manage how much spice you add by removing seeds. The more jalapeño seeds you add, the more spice. Removing all the seed will have little to no heat.

Cilantro: We love using fresh herbs in cooking! Fresh chopped cilantro is a key ingredient to add a punch of flavor to the avocado spread. 

Bacon: Bacon is a must in any breakfast sandwich!! It adds saltiness and crunch to the sandwich.

Eggs: Eggs are another must-have on a breakfast sandwiches! We chose fried eggs because they hold so well in these sandwiches.
Tomatoes: Each sandwich is layered with thin tomato slices. 

Limes: We added lime juice from a couple limes to the avocado spread to incorporate more tex-mex flavors. 

Cumin: A classic seasoning in tex-mex recipes is cumin. We added cumin to the avocado spread to add a burst of flavor.

Salt and Pepper: Salt and pepper are used to season the fresh avocado spread.

How to Assemble the Sandwiches

Start by making your avocado spread. In a medium bowl, mash your avocado and them add the chopped cilantro, minced jalapeño, cumin and salt and pepper. Mix together and set aside while you make the eggs and bacon. 

Ina cast iron skillet, over medium heat lay your strips of bacon on the pan. Cook for 4-5 minutes on each side until they are crispy and cooked through. Place the bacon on a plate lined with paper towels to catch the grease. Cook the rest of the bacon and pat dry. 

Using the same skillet, with the bacon grease still in the pan, crack your eggs in the pan. Fry on one side for several minutes until the whites are cooked through. Gently flip the egg over and cook on the other side, careful not to break the yolk. Cook for an an additionally 3-4 minutes on the opposite side. Remove from the heat.

Warm the croissants in in a warmed 200°F oven or in your microwave for 20 seconds. Slice the warmed croissants in half and assemble your the tex-mex sandwiches. Start by spreading a thin layer of avocado spread on each face of the sandwich. Layer bacon, egg, and tomato slices and sandwich with the top of your croissant.

Description

Ingredients

Units Scale
  • 4 bakery croissants
  • 2 tomatoes (sliced)
  • 4 eggs
  • 8 strips bacon

Spicy Avocado Spread

  • 3 avocados (mashed)
  • 1 jalapeno seeded (minced)
  • 1/3 cup fresh cilantro (chopped)
  • 1 lime (juiced)
  • salt and pepper (to season)
