The Starbucks lemon loaf has a cult following and we totally understand why. The sweet, iced lemon loaf paired with hot coffee is a match made in heaven!
When thinking of our recipes this month, we thought it would be fun to create an elevated twist on their basic lemon bread. After thinking of a couple different flavor combinations, we landed on a Ginger Lemon Poppy Seed bread.
The blend of the lemon and ginger is so delicious and the light, whipped frosting makes this loaf a fresh breakfast treat or dessert after dinner! Plus, it’s super simple to whip up on a cozy morning for your family, roommates or friends.

Ginger Lemon Poppy Seed Loaf
All-Purpose Flour: Just like any baked good, flour is often the foundation. We prefer and recommend using unbleached all-purpose flour for this recipe.
Baking Powder: Baking powder helps the bread to rise and gives it a fluffier texture.
Poppy Seeds: We absolutely love the combination of lemon and poppy seeds. It’s classic and delicious, and makes the bread look beautiful as well.
Lemon Zest: Lemon zest adds a gorgeous, fresh lemon flavor to the bread.
Salt: We recommend adding a bit of salt to offset the sweetness of the bread.
Butter: The slightly softened butter adds a delicious flavor and keeps the loaf moist as well. We love using Kerigold butter, because it’s better for you and has such a delicious taste.
Sugar: The sugar adds sweetness to the bread. If you prefer a healthier option, you can substitute the sugar with 1/2 cup of honey.
Eggs: Eggs provide structure and texture to the cake.
Vanilla Flavor: A bit of vanilla flavor compliments the lemon and ginger flavors beautifully.
Lemon Juice: Lemon juice creates an enhanced lemon flavor and add moisture to the cake.
Grated Ginger: Grated ginger adds a delicious tang and spice to the bread. It pairs beautifully with the lemon.
Greek Yogurt: Our secret ingredient for just about any loaf bread or muffin recipe is greek yogurt. It makes the bread so moist, fluffy and delicious!
Whipped Lemon Frosting
Whipping Cream: The whipping cream is whipped at such a high speed that it creates stiff peaks to form a shipped frosting.
Powdered Sugar: Powdered sugar is added to the frosting to add sweetness.
Lemon Juice and Zest: the juice and zest of one lemon adds a beautiful, light lemon flavor.
Vanilla: Vanilla is added to add a warmer flavor to the whipped cream as well.
Crystalized Ginger: We added crystalized ginger on top of the whipped cream. It adds such a beautiful flavor and texture.
How to Make the Ginger Lemon Poppy Seed Loaf
This ginger lemon poppy seed loaf is so easy to whip up on a cozy Saturday morning with your family, for a brunch with friends, or as a sweet treat after dinner.
First, preheat your oven to 350°F and line a 9 x 5 loaf pan with parchment paper or grease with a bit of softened butter.
Mix the Dry Ingredients…
To start, you’ll want to mix the dry ingredients together. In a medium size mixing bowl, whisk the flour, baking powder, poppy seeds, salt and lemon zest together. Then, just set it aside for later.
Combine the Wet Ingredients…
Next, in a stand mixer with the paddle attachment, cream the butter and sugar (or honey if you choose to swap out the sugar) on medium/high speed. Once the mixture is creamed, add the eggs, mixing them one at a time. Then beat in the vanilla, lemon juice, greek yogurt and grated ginger until the mixture is well combined.
It’s totally okay if the mixture looks bit clumpy. The acidity in the lemon juice combined with the greek yogurt may make it look that way. It will still come out tasting amazing!
Add the Flour Mixture, Pour and Bake…
Then, add the flour mixture slowly to the wet ingredients. Mix until just combined—be careful not to over-mix. Finally, transfer the bread batter into the prepped loaf pan and bake for 45 minutes to an hour. The bake time just depends on how your oven cooks, but the bread should be set completely in the middle.
*Pro tip: to prevent your bread from burning around the edges, cover the pan in foil and continue baking.
Once the loaf has finished baking, remove it from the oven and let it cool almost completely before adding the whipped lemon frosting.
Make the Whipped Lemon Frosting…
This frosting literally only takes 5 minutes to whip up and is so delicious! The ginger lemon poppy seed loaf tastes amazing on it’s own, but this whipped cream frosting adds a delicious light texture—that we highly recommend!
To start, add 1 pint of whipping cream to a stand mixer bowl. Using the whisk attachment, whisk on high for 3 minutes, or until stiff peaks form.
Then, add the powdered sugar, lemon juice, lemon zest and vanilla. Mix the ingredients until well combined.
Add Your Frosting and Toppings…
Add the whipped lemon frosting to the top of the cooled loaf and top with chopped candied ginger.
Lastly, serve and enjoy with a hot cup of coffee or tea!

Ginger Lemon Poppy Seed Loaf
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 4 tsp poppy seeds
- 1/2 tsp salt
- 1 stick butter (softened)
- 1 cup sugar (or 1/2 cup honey)
- 2 eggs
- 1 tsp vanilla (flavor)
- 3 tbsp lemon juice
- 3 tbsp grated ginger
- 5 oz greek yogurt
Whipped Lemon Frosting
- 1 pint whipping cream
- 1 cup powdered sugar
- 1 lemon juice and zest
- 1 tsp vanilla
- crystalized ginger (for topping)
Instructions
Ginger Lemon Poppyseed Loaf
- Preheat oven to 350°F. Grease a 9×5 loaf pan with butter, coconut oil or line with parchment paper.
- In a medium sized mixing bowl, combine flour, baking powder, poppyseeds, lemon zest and salt. Set aside for later.
- In a stand mixer bowl, cream the butter and sugar (or honey together) on medium/high speed. Add eggs, one at a time, on low. Then beat in vanilla, lemon juice, greek yogurt and grated ginger until combined.
- Then add the flour mixture and mix until just combined. Bake the bread for 45 minutes to an hour. Let it cool before frosting.
Whipped Lemon Frosting
- Whip the whipping cream on high until stiff peaks form (about 3 minutes).
- On medium speed mix in the powdered sugar, lemon juice, zest and vanilla until it’s all combined.
