30-Minute Spicy Cilantro Chicken Noodle Bowl

Our favorite cuddle weather, comfort food? This spicy cilantro chicken noodle bowl!! A spicy and savory broth, fresh veggies, spicy chicken and a large handful of cilantro make this noodle bowl so savory and heart warming. Its savory and heartwarming and has the right balance spice and fresh flavor. It perfect for a date night, dinner with friends, or if you’re wanting to make a quick yummy meal on a busy week night.

We’re all about quick and easy dinners over here. But quick and easy doesn’t mean that you have to sacrifice making a nice meal!! And that is why we love noodle bowls, they check all the marks. They’re quick, easy and taste like a warm hug!

If you’re anything like us, there are some days where the last thing you want to do is cook dinner, but you are craving some comfort food. Meet your new favorite weeknight dinner…. spicy cilantro chicken noodle bowl. When you want to make something that is going to fill you up after a long day and also feel like a warm hug. This noodle bowl is just for you!!

30-Minute Spicy Cilantro Chicken Noodle Bowl

Inspired by one of our favorite New York Eats

The inspiration from this bowl comes from one of our favorite New York eats at a place called Very Fresh Noodles in Chelsea Market. We stumbled across the restaurant on a cold rainy day, when we were wanting a soul-warming meal. The grab and go noodle restaurant served some of the best homemade in-house noodle bowls we have ever had. Each noodle bowl was filled with flavorful spicy broth, veggies and delicious noodles and cilantro. It was such a delicious flavor combination, we wanted to try to recreate this at home. AND we wanted share so you can enjoy too!! We put our own twist on the recipe by adding in some veggies and spicy roasted chicken.

What’s in this recipe:

Instant Noodles: You can purchase packets of instant noodles at most local grocery stores or a local asian market will sell large packets. The instant noodles just take several minutes to cook after adding to the broth!!

Chicken Broth: Stock up on a couple boxes of broth for your soup. The instant noodles tend to soak up a lot of broth. And we went with a chicken flavored broth to pair with the topping of spicy blackened chicken.

Fresh chopped celery, carrots and mushrooms: We love adding a lot of veggies to our ramen. It makes it more flavorful and adds more texture and flavor to the soup. Celery, carrots and mushrooms are our favorite to add to the dish because they add a sweet and savory flavor.

Hoisin sauce: Hoisin is a delicious sauce blend of sweet and spicy flavors. It adds such a nice flavor to the broth of the soup.

Chili oil: Here is where the kick comes in!! Just by the name, you know its going to be spicy! It is a marinated mixture of chili flakes and oil that will pack a spicy punch to the noodle bowl broth.

5 spice powder: All the dry spices you need are in one blend. The 5 spice blend of fennel, cinnamon, cloves, star anise, and peppercorns. You can find it at your local grocery store.

Ginger Root: Ginger adds a kick of spice and strong flavor to the ramen broth. We always recommend adding fresh ginger to asian dishes but if you do not have on hand, you can add 1/2 tsp of powdered ginger.

Garlic: Garlic adds a savory flavor and is sautéed with all of your veggies.

Rice Vinegar: A touch of vinegar will help enhance the umami flavor of the broth.

Brown Sugar: You don’t add much brown sugar to the dish, because a little does the trick to help balance a little of the spicy kick.

Cilantro: You can go overboard on the cilantro for this noodle bowl. Lots and lots of fresh cilantro mixed into the noodles adds freshness to the noodle bowl mixture. In our opinion, it really is the key to making this bowl so insanely good.

Chicken Breast: We chose to top our noodle bowl with a spicy blackened chicken and made a homemade spice rub of smoked paprika, chili powder and 5 spice powder to add an extra kick of flavor.

Smoked Paprika and Chili Powder: A dash of smoked paprika and chili powder are used to create a delicious rub for the blackened chicken breast.

Noodle Bowl Topping Recommendations

You can have fun with noodle bowl toppings!! We recommend choosing a protein of choice- chicken, soft boiled eggs, tofu, pork or beef! And to add fresh flavors to the soup, top with fresh grated carrots, scallions, fish cakes! Have fun!

How to Make Ramen

The ingredient list can look intimidating, but we promise, this noodle bowl is so simple to make. All it really takes to make is chopping some vegetables and throwing everything in a pot to cook and simmer together. First, you will start by chopping the celery, mushrooms, carrots, ginger and garlic.

Next, in a pot over medium-high heat, toss the chopped veggies into a large pot or dutch oven with some sesame oil. Sauté the vegetables until they are soft and add in some of your seasonings to simmer with the veggies. Add in hoisin, 5 spice powder, and chili oil and stir to coat everything in the spices. Sauté for about 5 more minutes until fragrant. Next, add in rice vinegar, brown sugar and chicken broth and let it simmer. Lastly, when the broth starts to bubble, add in 4 cups of water and the noodle packets. Cook according to length on package, typically about 4-5 minutes.

Once noodles are cooked, serve hot and top with scallions, soft boiled egg, chicken, fresh grated carrots, or fish cakes! Enjoy!

Making the Spicy Blackened Chicken

Mix together your spices for your spicy chicken rub- ground pepper, chili powder, smoked paprika, 5-spice salt and pepper. Rub the spices on both sides of the chicken breast. Add a bit of sesame oil to a skillet and blacken chicken for 5 minutes on each side. Once blackened, put the chicken on a baking sheet and pop in preheated 425oF oven for 15 minutes or until inside reaches 165oF. Remove from oven and slice for toppings.

Ingredients

  • 6 stalks celery (chopped)
  • 3 carrots (grated or finely chopped)
  • 5 cloves garlic (minced)
  • 1 inch piece fresh ginger root (grated or minced)
  • 1 tsp 5 spice powder
  • 1/4 cup chili oil
  • 3 tsp hoisen sauce
  • 2 tsp rice vinegar
  • 1 tbsp brown sugar
  • 4 cups chicken broth
  • 4 cups water
  • 12 oz ramen noodles

Spicy Blackened Chicken

  • 3 chicken breasts
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 2 tsp 5 spice powder
  • salt and pepper (to season)

Optional Ramen Toppings

  • green onions (chopped)
  • carrots (grated or finely chopped)
  • narutomaki fish cakes


Instructions

  1. First, preheat oven to 450°F for your chicken. Start by chopping the celery, mushrooms, carrots, ginger and garlic.
