How to make Maple Cheesy Egg and Sausage Breakfast Sandwiches
Step 1: Preheat the oven and cook the eggs in a buttered baking dish.
Start by preheating the oven to 350ºF and buttering a 9×13-inch glass or ceramic baking dish. If you don’t have a baking dish this size, find one that is close to those dimensions.
Grab a large bowl and crack a dozen eggs into the bowl. Lightly whisk the eggs, making sure that you can still see some yolk and white. It will create a pretty marbling effect for the eggs.
Pop the pan in the preheated oven and bake the eggs for about 25-30 minutes, or until cooked through. Remove the baked eggs from the oven and set them on a cooling rack to cool.
Tip: Depending on what kind of dish you use, the cook time may vary.
Step 2: Make maple sausage patties and cook in a skillet over medium heat.
This maple sausage is possibly one of my favorite additions to this sandwich. Adding maple syrup to the ground sausage is a simple way to elevate the flavor of these breakfast sandwiches. The subtle sweetness mixed with the savory sausage is a match made in heaven!
Using your hands, mix in 1/4 cup of maple syrup into the breakfast sausage. Divide the sausage into 6 equal-sized pieces and form them into sausage patties.
To cook the sausage patties, heat a skillet over medium-high heat. Place 2-3 patties in the skillet at a time and cook for 4-5 minutes on each side. Once they reach an internal temperature of 165ºF, remove them from the skillet and place them on a paper-towel-lined plate. Continue cooking the rest of the patties until all of them are cooked and crispy brown.
Tip: We recommend adding 2-3 patties and making multiple batches. That way, you can control the temperature as they cook and don’t overcrowd the pan. The more you add onto the pan, the longer it will take to cook.

Step 3: Make Chive Aioli Sauce.
The chive aioli sauce adds herby flavor and some creaminess to this sandwich. It’s delicious and super easy to make.
Add mayonnaise, chopped chives, minced garlic, lemon juice, and salt and pepper to a small bowl. Use a spoon or whisk to mix the aioli sauce together. You can taste test the sauce to adjust the salt and pepper to taste.
Step 4: Toast the English muffins and cut out egg rounds.
Before you assemble the sandwiches, we recommend toasting the English muffins in a toaster oven or toater. It is going to make them slightly crispy on the edges. Toasting the bread will also create a moisture barrier so that the bread doesn’t become soggy.
Slice the eggs into 6 equal-sized squares, or use a round cookie cutter to cut egg rounds. Now you’re ready to assemble the sandwiches.
Step 5: Assemble sandwiches and pop in the oven for
Start by spreading a thin layer of aioli sauce on both halves of the English muffins. Then stack the sandwich with a maple sausage patty, slice of egg and a slice of cheese.

Tips For Making Breakfast Sandwiches
- Toast the English Muffins to avoid soggy bread. This is a hack if you want to avoid soggy bread. Toasting the bread rounds until they are golden and crispy will not only prevent the sandwich from getting soggy, it will also add a crispiness and nuttiness to the sandwich.
- If you can find ground breakfast chicken sausage, use a ground pork breakfast sausage. This is another sausage option that is lean and tastes delicious.

How to store sandwiches for meal prepping
Wrap each sandwich tightly in parchment paper or plastic wrap before storing in an airtight container or large plastic bag. Store in the fridge for up to 4 days. Store in the freezer for up to 3 months.
How to reheat sandwiches for meal prepping
You can reheat these sandwiches a couple of different ways. Reheat chilled sandwiches in the microwave for 30-60 seconds or on a cookie sheet in a preheated 350ºF oven for 8-10 minutes.
Reheat frozen sandwiches by wrapping a damp paper towel around the sandwich, head on defrost and then warm for 1-2 minutes until warm.

Cheesy Egg and Maple Sausage Sandwiches with Chive Aioli Sauce
Description
Sweet maple breakfast sausage patties, gooey melted sharp cheddar cheese, fluffy egg rounds and an chive aioli spread sandwiched between two toasted English muffins to make delicious savory-sweet breakfast.
Ingredients
- 6 English muffins
- 12 eggs
- 1 lb ground pork or chicken breakfast sausage
- 1 cup cheddar cheese
- 1/4 cup maple syrup
Chive Aioli
- 1/2 cup mayonnaise
- 2 tbsp fresh chives, finely chopped
- 1–2 cloves of garlic, minced or grated
- 2 tsp lemon juice
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350ºF. Butter a 9×13-inch baking dish.
- Make Chive Aioli sauce. In a small bowl, mix mayonnaise, chives, garlic, lemon, and black pepper until blended. Set to the side.
- In a large bowl, lightly whisk eggs and pour them into the buttered baking dish. Pour the egg mixture into the buttered sheet pan. Bake for 25-30 minutes until cooked through.
- While the egg is cooking, make sausage patties. In a medium mixing bowl, use your hands to mix in 1/4 cup of maple syrup into the breakfast sausage. Form the sausage into 6 patties.
- Heat a skillet over medium heat and cook on each side for 4-5 minutes until they are cooked through. Use a thermometer to check the temperature as they cook. Once they reach an internal temperature of 165ºF you can remove them from the skillet.
- Using a large circle cookie cutter, cut out 6 egg rounds. Save any extra egg scraps for munching on throughout the week.
- Toast the English muffins, and spread a thin layer of chive aioli sauce on both English muffin sides. Sandwich with egg rounds and top with some extra cheese and a sausage patty.
- Wrap in foil or wax paper for meal prepping during the week. Store in an airtight container.
