Prosciutto Spinach Omelet

Ingredients

  • 3 eggs
  • 2 slices prosciutto (broiled until crisp and chopped)
  • 1/2 cup spinach (chopped)
  • salt and peper ((to season))
  • white cheddar cheese ((sprinkle for topping))


Instructions

  1. Turn oven onto broil and allow to preheat. Once oven is preheated, place a piece of prosciutto on parchment paper-lined pan. Place in oven and broil until edges begin to brown.
  2. Roughly chop spinach and prosciutto.
  3. In a medium bowl, whisk together eggs, chopped spinach and chopped prosciutto.
  4. In a large skillet, using low-medium heat, butter pan and pour egg mixture into the pan. Once omelet appears to be mostly through, gently fold omelet in half (like a taco) and cook until egg is cooked through
  5. Cut in half and serve with avocado (optional).
