Hey Mozie Fam! It has been a while since we have brought you into our kitchen and we are so excited to share some yummy Mozie Homestyle Meals with you. As we embark on this new branding chapter for Mozie, we are finding ways to weave our lives at home into this online space. Today we are sharing some of our favorite fresh and savory breakfast recipes. Breakfast is probably our favorite cuisine and we cant wait for you to add these recipes to your recipe box!
We love getting in the kitchen to create a flavorful experience for people to enjoy. Good food has the ability to create an experience and is a source of memories for many people. We feel that the recipes we share with you should help to cultivate those memorable moments around the table. So, before we release our recipes to you, we go through a preparation, experimentation and time are invested into making yummy recipes that keep you coming back for more. Many times our evenings after work are spent in the kitchen cooking and creating. As odd as it sounds, the focus it takes to chop, stir and cook creates a therapeutic rhythm which serves as a stress reliever and a time to create our Mozie Homestyle Meals.

Savory Breakfast Recipes
Honestly, most mornings I have a sweet tooth and crave sweet things like our baked oatmeal or paleo muffins but there are mornings where I wake up craving something a little more savory. Are you like this too? Or is it just me? These are some of our easy go-to dishes that are perfect for any morning you have some extra time in the kitchen.
Prosciutto Spinach Omelet
This recipe has been a staple savory breakfast recipe for several years in our house. We created this recipe one morning with leftover toppings we had in our fridge after making pizza the night before. It is super easy to whip up and is packed with proteins and some veggies! The saltiness of the prosciutto balances so well with the egg and chopped spinach. Normally we serve our omelet with a side of avocado or sourdough toast!

- Total Time: 10 minutes
- Yield: 2 1x
Ingredients
- 3 eggs
- 2 slices prosciutto (broiled until crisp and chopped)
- 1/2 cup spinach (chopped)
- salt and peper ((to season))
- white cheddar cheese ((sprinkle for topping))
Instructions
- Turn oven onto broil and allow to preheat. Once oven is preheated, place a piece of prosciutto on parchment paper-lined pan. Place in oven and broil until edges begin to brown.
- Roughly chop spinach and prosciutto.
- In a medium bowl, whisk together eggs, chopped spinach and chopped prosciutto.
- In a large skillet, using low-medium heat, butter pan and pour egg mixture into the pan. Once omelet appears to be mostly through, gently fold omelet in half (like a taco) and cook until egg is cooked through
- Cut in half and serve with avocado (optional).

Savory Sweet Potato Egg Hash
I love this hash because everything can be cooked and thrown into a skillet and served hot. The blend of the roasted sweet potatoes seasoned with garam masala, with the freshly sautéed kale are the perfect addition of flavors to this dish that is topped with an egg.

- Total Time: 32 minutes

Ingredients
- 1 large sweet potato
- 2 tsp garam masala
- 1/2 onion, diced
- 3 cloves of garlic
- 15–20 cherry tomatoes (halved)
- 1 cup kale (chopped)
- 4 eggs ((1 per person served))
- 1 green onion (sliced)
- 2 tbsp coconut oil
- 1 tbsp olive oil
- parmesan reggiano ((for topping))
- salt, pepper, red pepper flakes ((for seasoning))
Instructions
- Preheat oven to 425°F. Take 1 Tbsp of coconut oil and put on a baking sheet. Place into preheating oven to melt and remove once oil has melted (This should take about 3-5 minutes)
- While oven is preheating, chop sweet potato into small cubes and toss in melted coconut oil on pan. Sprinkle with salt, pepper, graham masala.
- Using another baking sheet, line with parchment paper for your tomatoes. Halve your cherry tomatoes, place sliced side down on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
- Once oven is heated, place sweet potatoes and tomatoes into the oven to roast. Roast tomatoes for 6-10 minutes(until browned) and potatoes for 25 minutes.
- While the potatoes and tomatoes are roasting in the oven, start to sauté onions and garlic in ½ tbsp coconut oil on medium heat. Sprinkle with salt and pepper. After about 10 minutes add chopped kale and cover with pot lid to soften. Once kale has softened, remove from heat and set to the side.
- In a separate pan, prepare your eggs in the remaining coconut oil.
- Once the sweet potatoes and tomatoes are out of the oven, toss in pan with onions and kale mixture to incorporate.
- Top with egg and green onions and add extra salt and pepper for flavor.

Tip: This savory breakfast hash is paired well with a side of sliced avocado!

Recipe Notes:
Garam Masala (a blend of south Asian spices, common in Indian cuisine) has been a staple in our kitchen for some time. I add this seasoning to A LOT of my savory dishes. It has the perfect strength of spice and seems to further enhance the flavors in the food. I enjoy adding this spice when roasting vegetables, or seasoning light meats, like chicken.
*If you don’t have garam masala, you can use a combination of cumin and allspice.
Avo-Smash Breakfast Bowls
We are huge fans of superfood bowls, because there are so many ways to add so many nutritious foods and flavors into one bowl. This is our spin on superfood bowls but we made it breakfast! Our avo-smash bowl is a blend of smashed avocado, egg, and vegetables on a bed of greens.

Ingredients
- 1 cup fresh arugula
- 1 sweet potato (roasted)
- 1 tbsp coconut oil (melted)
- 10 cherry tomatoes
- 1 tbsp olive oil
- 4 boiled eggs ((one for each bowl))
- 2 avocados
- 1 lemon
Seasonings and Toppings
- parmesan reggiano or fetta cheese ((for topping))
- cinnamon ((to season potatoes))
- honey ((to season potatoes))
- pepper, maldon flakey salt, and red pepper flakes (to season)
Instructions
Making Bowl Toppings
- You will first start off by making your toppings – roasting your vegetables and boiling your eggs. Preheat oven to 425°F.
- Cut sweet potato into cubes, place on baking sheet, toss in melted coconut oil, sprinkle with cinnamon and drizzle with honey. Once oven is heated, place in oven and cook for 25 minutes.
- Using another baking sheet, line with parchment paper for your tomatoes. Halve your cherry tomatoes, place sliced side down on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Cook for 6-10 minutes, until browned.
- Boil your eggs- fill a small pot 2/3 the way with water, place egg in water, bring to a boil. Once water is boiling, remove from heat and let egg sit in the heated water for 12 minutes. Chill and peal shell and slice for serving.
Make Your Avo-Smash!
- In a small to medium bowl, smash one avocado. Season using the juice of half a lemon, pepper, red pepper flakes. Sprinkle a small amount of flakey salt on top.
Make Your Bowl!
- Place your arugula at the bottom.( I recommend drizzling with olive oil and seasoning with salt and pepper. )
- Start topping by placing avo-smash in the center of the bed of greens. Arrange potatoes, tomatoes, and egg around the bowl. Sprinkle with everything bagel seasoning and parmesan Reggiano or fetta cheese(optional).
